The invention is directed to a method to produce a water-in-oil-in-water (w/o/w) emulsion, comprising: a. preparing a water-in-oil (w/o) emulsion; b. atomizing said w/o emulsion in the presence of a carrier material comprising at least a water soluble matrix material and at least one emulsifier, to form agglomerates; c. dispersing said agglomerates in an aqueous liquid, such as water or an aqueous solution. Also provided is a new instant powder (obtained after step b) that can be used to prepare the w/o/w emulsion. The emulsion of the invention is advantageously suited for the encapsulation of active components.

The invention relates to microcapsule comprising at least one fat-soluble active substance selected from provitamins, vitamins and esters thereof, monounsaturated fatty acids, polyunsaturated fatty acids (PUFA's), carotenoids and benzoquinones embedded in a matrix comprising a hydrocolloid and optionally one or more other matrix components, wherein the content of active substance(s) is from 30 to 60 % of total weight of the microcapsule, and wherein the ratio between said fat-soluble active substance(s) and said hydrocolloid is at least 4:1, as well as a process for preparing such microcapsules. The microcapsules of the invention may be used for the preparation of tablets, food products and other products including an active substance.

The present invention relates to coated particles of benzoic acid or a salt thereof for use in food or feed, to a method for the preparation of such particles, and to methods for the improvement of the flowability and impairment of caking of particles of an organic agent as well as to a method for the reduction of dust in the handling of particles of an organic agent. To this end a coated particle comprises a flakes of benzoic acid or a salt thereof and an outer layer of a hydrocarbon composition wherein the hydrocarbon composition has a melting point below about 40°C. The present invention also relates to the use of these coated particles in food or feed and to food or feed compositions containing these coated particles.

The present invention provides a method of producing a protein-based encapsulate, said method comprising: providing an aqueous solution of a protein that is capable of forming disulfide cross-links; submitting said aqueous solution to a protein activation treatment to produce an aqueous suspension of activated protein aggregates, said suspension having a reactivity of at least 5.0 μmol thiol groups per gram of activated protein aggregates as determined in the Ellman's assay; dispensing said aqueous suspension in a gas or a water-immiscible liquid to produce suspension droplets having a diameter of 0.1-500 μm; and forming disulfide cross-links between the activated protein aggregates by contacting the activated protein aggregates with an oxidizing agent, optionally after said activated protein aggregates have been partially cross-linked by forming disulfide cross-links by means of heat treatment or by pressurization to a pressure in excess of 50 MPa. The aforementioned method offers the advantage that the characteristics of the protein-based encapsulation matrix can be controlled effectively. Furthermore, said method enables the preparation of protein-based encapsulates that very effectively protect the encapsulated components, e.g. against oxidation or moisture.

A mineral or vitamin fortification ingredient which does not deleteriously affect palatability and appearance of foods is obtained by encapsulation of the mineral or vitamin in a grindable, glassy matrix composition. The glassy matrix composition includes an oligosaccharide, which not only forms a glassy matrix, but also beneficially increases the fiber content of the food. At least one edible oil is included in the encapsulating composition to prevent substantial adverse interaction between the mineral or vitamin encapsulant and the glass-forming oligosaccharide matrix material, and to achieve controlled release of the encapsulant from the glassy matrix. The oil also reduces or eliminates the use of added water as a plasticizer. In the fortification of foods with calcium, absoption of calcium into the bloods stream is substantially enhanced by the glass-forming oligosaccharide matrix material such as fructooligosaccharides and inulin as well as by medium chain triglycerides (MCT) and lactose. The fortification ingredient may be produced by melting the one or more glass-forming matrix components such as inulin or other oligosaccharides, and optional sugar, in the presence of optionally added water. The resulting melt may then be combined with an oil-slurried mineral and/or vitamin encapsulant and cooled to obtain a formable, pliable molter mass. The mass may be extruded and cut into pieces or pellets and cooled to obtained a grindable, glassy matrix which encapsulates the oil encapsulated mineral or vitamin. The encapsulated minerals and/or vitamins may be ground into a particulate composition such as a fine powder for direct incorporation into or for topical application onto foods such as ready-to-eat cereals, yogurt and fruit snacks.
