The present invention relates to a protein hydrolysate comprising free amino acids and peptides whereby the weight ratio of free amino acids to peptides is about 1:1 and wherein at least about 50 molar % of the peptides has a molecular weight of 400 Da or less. This composition may be rich in one or more branched- chain amino acid- (BCAA-) and/or glutamine-containing di- or tripeptides. The present invention describes a process wherein toxic and/or off-flavoured compounds are modified upon hydrolysis with a single enzyme. The modification results in a reduction of the toxicity and/or off-flavour of said compounds. The toxic and/or off-flavoured compounds preferably originate from Solanaceae and are glycosides. The enzyme cleaves said compounds at the covalent bond between the aglycone and the glycosidic part. More preferably the enzyme has an alpha-chaconinase activity, degrades alpha-chaconine to liberate the solanidine aglycone and a trisaccharide and originates from Aspergillus niger. The enzymatic hydrolysis of the invention can be applied in, for instance, the recovery of protein from potato fruitwater after separation of the starch granules.
