Abstract:
A process for obtaining a puffed snack having a hard surface, a soft inside and a favorable texture and showing a difference between the surface color tone and the inside color tone. In this process, a coating solution or water is sprayed onto the surface of a puffed snack dough extruded as a robe from an extruder. After spraying, the puffed snack dough is dried to give a moisture content of 5 to 12% by weight followed by cutting. An apparatus to be used in this production process composed of: a spraying unit (2) by which a coating solution or water is sprayed on the surface of a puffed snack dough extruded from a nozzle port (1b, 10b) of an extruder (1, 10); a drying unit (3) located in the downstream thereof; a drawing system (4) having belts (4e, 4f) for holding the puffed snack dough between them; a supporting pipe (5, 50) for supporting the puffed snack dough which is located adjacent to the drawing system in the downstream thereof; and a cutter (6) provided in the outlet of the holding pipe close thereto in such a manner that the puffed snack dough can be cut thereby.

Abstract:
The invention relates to a device for producing cocoa compound with a defined grain size using an extruder (10) with a tool having apertures (26) of a diameter of under 150 νm and a cutting tool (24) which cuts the cocoa compound leaving the tool.
Abstract:
The invention relates to a method for stamping a plurality of articles (2), the method comprising the steps of transporting the plurality of articles (2) along a first conveyance path (4), splitting a transport flow of the plurality of articles (2) along the first conveyance path {4} into at least two parallel transport lines so as to transport the plurality of articles (2) along at least two parallel second conveyance paths (8, 10), stamping the plurality of articles (2) transported along the at least two parallel second conveyance paths (8, 10) using at least two parallel stamping units (12, 14) and merging transport flows of the plurality of articles (2) along the at least two parallel second conveyance paths (8, 10) so as to transport the plurality of articles (2) along a third conveyance path (18). Further, the invention relates to an apparatus for stamping a plurality of articles (2), the apparatus comprising a transport unit configured to transport the plurality of articles (2) along a first conveyance path (4), a splitting unit (6) configured to split a transport flow of the plurality of articles (2) along the first conveyance path (4) into at least two parallel transport lines so as to transport the plurality of articles (2) along at least two parallel second conveyance paths (8, 10), at least two parallel stamping units (12, 14) configured to stamp the plurality of articles (2) transported along the at least two parallel second conveyance paths (8, 10) and a merging unit (16) configured to merge transport flows of the plurality of articles (2) along the at least two parallel second conveyance paths (8, 10) so as to transport the plurality of articles (2) along a third conveyance path (18).
Abstract:
The present invention relates to a cutting or embossing tool for frozen confectionery products comprising at least two elements, each element comprising a void with an inner contour corresponding to the outer contour of the product to be cut or embossed. At least one of the elements comprises at least one knife or embosser with a blade or an embossing surface extending along the inner contour of the void. The tool can be used to cut lines or a line pattern shape into the surface of a frozen confectionery product, in particular in coating.
Abstract:
An embossing device and a method comprise embossing characters or structures onto food products of plastic consistency, such as frozen confectionery articles, preferably extruded ice cream sticks, by means of a metal stamp at a temperature of 0 DEG C to 60 DEG C.

Abstract:
In the production of extruded icecream bodies it is customary to cut the bodies from an extruded string of icecream when the latter, laying on a conveyor belt, has reached a ''medium frozen'' condition, whereafter the bodies are transferred to a faster moving conveyor, on which they are moved through a hard-freezing zone with a desired mutual spacing between the bodies. According to the invention several advantages are obtained by arranging for the extruded string (6) to run unbroken through a continuous freezing zone, when only constrictions or notches (12) have been provided in the string by transversely moved tool means (8, 20, 22) while the ice substance is still formable; after the hard-freezing of the string the single bodies (P) are separated from the string by a simple successive breaking action on the front end of the string, and the desired distance between the individual bodies can be produced by letting the bodies fall down onto a conveyor (18) moving at increased speed.
