Um eine zufriedenstellende Sterilisation einer großen Anzahl von Packungen zu ermöglichen, ohne dass die Packungen verformt werden, dass ihr Druckbild beschädigt wird, oder dass Wasser bzw. Dampf eintritt, ist vorgesehen, dass der Karton zur Verminderung des Wassereintritts mittels Leim hydrophobiert ist und dass die eingesetzte Leimmenge zwischen 1 und 4 kg/t trockenen Faserstoffs liegt.

The invention relates to a food cooking installation comprising: numerous cooking tanks (1) which are used to receive the food items to be cooked; means of loading/unloading (2) the food items into/from said cooking tanks (1); and means of conveying, driving and storing liquids, which are used to connect a heated liquid container, a cooled liquid container and a piped water delivery point with the aforementioned cooking tanks (1). In this way, said tanks can be filled and emptied independently and the food items contained therein can be subjected to successive baths for different periods of time and at different temperatures, at least one of said baths being a cooking bath and the other a cooling bath. According to the invention, each of the aforementioned cooking tanks (1) comprises at least one lateral opening (3) which is equipped with impervious sealing means and which is used to load/unload the food items using the above-mentioned loading/unloading means (2).

The improvement includes using solid cone spray nozzles (50) with spray angles in the range of about 100 degrees to about 115 degrees. In one embodiment, the distance (D') between the nozzles and the container is in the range of about 70 mm to about 200 mm. In another embodiment, the flow rate if each nozzle (50) is reduced relative to known systems, while the total vessel flow rate is kept the same as per cubic meter load. Further, an overpressure may be added to the vessel via compressed air. In accordance with other aspects, an Impact reduction is used which relates nozzle flow rate, pressure, distance, etc. with moisture absorption in paperboard containers.

A beverage sterilization method and a beverage sterilization apparatus for carrying out the method are provided, wherein a container hermetically sealed and filled with a beverage which generates a gas from itself when heated to a temperature required for sterilization is arranged in a pressurized chamber (20), the pressure of the pressurized chamber is increased in such a manner that the pressure difference (M2 - M1) between the container pressure (M2) and the pressure (M1) of the pressurized chamber remains in a predetermined range while at the same time increasing the container temperature (L1) by increasing the internal temperature (L1) of the pressurized chamber to a predetermined level, the container in the pressurized chamber is held at a predetermined temperature for a predetermined length of time thereby to sterilize the beverage, and the pressure of the pressurized chamber is decreased so that the difference between the container pressure and the pressure of the pressurized chamber remains within a predetermined range while at the same time decreasing the container temperature by decreasing the internal temperature of the pressurized chamber. As a result, the beverage in the container can be sterilized by heat without deforming or breaking the container even during the temperature increase or decrease of the pressurized chamber having arranged therein the container filled with a beverage which generates a gas when heated.
