The current invention concerns a method for freezing food products and/or thawing frozen food products comprising placing the food products in a climate chamber with a controlled humid climate, air flow and temperature, characterized in that the frozen food products are subjected to an aerosol comprising atomized water droplets. In a second and third aspect, the invention concerns a food product thawed by the method according to the current invention, and a climate chamber for freezing and thawing of food products.

La présente invention concerne un procédé de conservation par congélation ou surgélation de tubercules crus, notamment de pommes de terre crues. La congélation ou la surgélation du ou des tubercules est effectuée, les tubercules étant crus, pelés, puis mis en sacs hermétiquement sous vide. La décongélation, en vue de la préparation des produits à la cuisson, s'effectue par trempage du ou des sacs, toujours hermétiquement fermés, dans de l'eau à une température appropriée, puis le ou les tubercules extraits du ou des sacs sont cuits.

A frozen food product which includes a raw protein portion, a raw or an only partially cooked or blanched vegetable portion and a sauce, contained in a sealed cooking pouch made primarily of paper and a susceptor layer, preferably aluminum, which may be placed in an oven or microwave oven so as to cook the contents of the cooking pouch. The raw protein product is preferably one of fish, beef, poultry, pork or veal. The vegetables are raw or blanched vegetables such as julienne peppers, celery, carrots, onions, zucchini or broccoli. The blanched vegetables are only partially cooked so that the time remaining to complete cooking of the vegetables is approximately the same as the time required to cook the raw protein portion.

Verfahren zur Herstellung von tiefgefrorenen Einzelfrüchten und einer Mischung aus Früchten zum Verzehr im aufgetauten Zustand, das die folgenden Verfahrensschritte aufweist: die Früchte werden tiefgefroren, anschließend wird eine vorbestimmte Menge der Früchte abgewogen, die Früchte werden frei fallend einer Verpackung zugeführt, wobei die fallenden Früchte mit einer vorbestimmten Menge einer Flüssigkeit besprüht werden, die eine Mischung folgender Inhaltsstoffe aufweist: Fruchtzucker, Fruchtsaft und/oder Fruchtsaftkonzentrat, Süßstoff und Gummi-Arabicum und vorzugsweise Calcium sowie natürliche und/oder naturidentische Aromastoffe enthalten.

Method for the realization and conservation of a seaweed-based biological product for food use, comprising the following operating steps: - prepare a predetermined quantity of frozen seaweed and subject said quantity of frozen seaweed to a thawing out treatment and subsequent separation of said seaweed; - carry out the dosage of said seaweed inside suitable container jar; - add inside said container jar containing seaweed mixed an acidifying substance; - carry out the hermetical seal of said jar; and - subject said jar to a pasteurization treatment.
