This invention is concerned with the problem of providing liquid food products that are shelf stable. A plastic or plastic coated container is cold filled with a non-carbonated liquid food product free from pathogenic organisms. The container is sealed. The food product in the container is then heated to a pasturization hold temperature in the range 160° F. to 174F. and is maintained at that temperature for a sufficient time to provide adequate kill of essentially all microorganisms in the food product. The food product is then cooled.

The hot water is caused to contain a water-soluble compound in an amount substantially exceeding a level contained in tap water, whereby it becomes possible to suppress the opalescence of the packaging material causing inferior appearance or transparency and leading to a lowering in gas-barrier property, which has been problematic in the conventional boil or retort hot water treatment.

The present disclosure provides dairy compositions comprising particulates and having good color, flavor, and texture after thermal processing. In a general embodiment, the compositions include particulates such as fruits and/or grains, and the compositions are thermally processed and shelf-stable. Methods for reducing or inhibiting browning of dairy-based compositions are also provided. The methods include, for example, thermally processing a dairy composition including particulates such as fruits and/or grains at a temperature that is less than about 240°F. The compositions and methods of the present disclosure provide several advantages including, for example, the reduction or avoidance of degradation/browning of the compositions during processing and storage.

The present invention is directed to a method for the pasteurization and/or sterilization of a continuous web of packages. The method includes the steps of providing a continuous web of individual packages; moving the continuous web through a first mechanical pressure seal into a pressure chamber; applying an increased pressure and temperature; and moving the continuous web through a second mechanical pressure seal out of the pressure chamber. The present invention is also directed to a continuous pressure seal apparatus and an apparatus for the pasteurization and/or sterilization of a continuous web of flexible packages. The apparatus includes a first mechanical continuous feeding pressure seal; a pressure chamber; and a second mechanical continuous feeding pressure seal. The first pressure seal is adjacent to an entry to the pressure chamber and the second pressure seal is adjacent to an exit of the pressure chamber.
