A reconstituted cereal grain, wherein said grain comprises at least about 10wt.% of resistant starch dietary fibre, at least about 25wt.% of cereal starch in addition to said resistant starch dietary fibre, and at least about 0.5wt.% emulsifier based on the dry weight of the grain; and wherein said grain has a product density of greater than about 1 kg/1. The grains have a natural appearance and cooking properties similar to parboiled milled cereal grains. Also provided are products comprising the grains.

A process for the manufacture of reconstituted rice is disclosed which comprising the steps of a) providing or preparing a mixture containing comminuted rice matrix material; b) hydrating the mixture to obtain a paste and kneading the paste obtained until the rice starch is at least semi-gelatinized; c) forming the semi-gelatinized mass to strands and cutting them to obtain grains similar or equal to the size of rice grains; and d) drying the grains. The mixture provided or prepared in step a) contains fibers and/or fibers are added during step b) and/or between step b) and step c). The fibers have a water absorption capacity of at least 2, preferably at least 3, most preferably at least 4. Moreover, the invention relates to reconstituted rice produced by such a method, to a mixture comprising reconstituted rice and natural rice and to a use of reconstituted rice for enriching natural rice.

Reducing the digestion of digestible carbohydrates in a digestible carbohydrate-based material, and reducing the absorption of the digestion product(s) of digestible carbohydrates (that is, simple sugars) within the small intestine. The undigested digestible carbohydrate and the unabsorbed digestion products pass through the small intestines and into the colon, where they are fermented. In effect, the food materials made by practicing the present invention cause a controlled amount of digestible carbohydrate to by-pass the small intestine, resulting in the fermentation of digestible carbohydrates in the colon. The invention also provides for processing of a digestible carbohydrate-based ingredient with a non-digestible food film material, to form a reduced digestible carbohydrate food having a protective food film network, which can inhibit or prevent digestion of the digestible carbohydrate. The present invention also provides for processing of a digestible carbohydrate-based ingredient with a non-digestible food film material, to provide a resulting reduced digestible carbohydrate food containing a viscosity-building component that contributes to the formation of a viscous intestinal chyme that can inhibit or prevent digestion of the digestible carbohydrate and can inhibit adsorption of digestion products of digestible carbohydrates in the small intestine.

A process and apparatus for the continuous production of masa and whole- corn flour for grain-based foods, includes a preconditioning of clean corn, grinding the moisturized corn to produce fine and coarse grind fractions, sieving the fine grind and aspirating from both fractions a light-bran fraction as animal feed, remilling the coarse grind for further bran extraction and admixing the sifted fine grind with lime to produce a limed grind, low-moisture precooking of a stream of limed corn particles in another stream of saturated steam to obtain a partial starch pregelatinization and protein denaturation degree, venting and separating the moist-heated corn particles, conditioning the segregated fine grind to soften and swell the endosperm, germ and bran fractions, hot- air drying the tempered fine grind and stabilizing for extended shelf-life, cooling the dried fine grind with clean air; grinding the agglomerated particles, classifying and separating the fine grind so produced from the coarse grind while the latter fraction is further remilled and screened to obtain a pregelatinized flour for tortilla and corn-based foods and an instant flour for whole-grain foods.

The invention relates to a method and an installation for the continuous production of couscous or similar products containing semolina and/or flour agglomerates. Said method comprises the following steps: a) semolina and flour are dosed and mixed in order to obtain a semolina/flour mixture; b) water is dosed into the semolina/flour mixture and mixed thereinto with sufficiently fast mixing movements for an at least partial liquidisation of the semolina/flour mixture, in order to evenly wet the semolina and flour particles of the semolina/flour mixture; c) the semolina/flour mixture wetted with water is mixed again with less rapid mixing movements, avoiding the liquidisation of the semolina/flour mixture, in order to create an agglomeration of semolina and/or flour particles to form agglomerates of semolina and/or flour particles; d) the agglomerates obtained in step c) are cooked, optionally adding more water in order to cause the starch contained in the semolina and flour particles to swell; and e) the swollen, starch-containing agglomerates obtained in step d) are dried, the agglomerates being mixed at least intermittently in the course of the drying process in order to prevent the agglomerates obtained in step c) and cooked in step d) from sticking together.

The present invention relates to a cereal-based product, which changes or loses colour upon addition of an aqueous liquid. The invention further relates to a process for obtaining the product and to a breakfast cereal comprising two types of cereals. The colour change is makes the consumption of breakfast cereals more interesting for children and adults. The cereal may be prepared by applying different coatings on a classic extruded cereals base, whereby an outer coating provides a certain colour and is essentially washed off upon addition of milk.

A corn grit product is provided that includes either (1) individual pieces of corn grit having a fat-free coating, or (2) clusters of corn grit pieces having a fat-free coating. Methods for preparing the corn grit products are provided and include the steps of feeding the corn grits into a rotating drum; coating the corn grits by spraying the corn grits with a stream of fat-free coating material until said coating material is applied to the corn grits in a substantially uniform manner; and drying the coated corn grits until the corn grits attain a desired percentage of moisture. Equivalent methods are provided for preparing products comprising clusters of corn grit coated with a fat-free coating material.
