본 발명은 야채/과일 발효액 제조방법과 상기 발효액을 이용한 발효유 및 발효푸딩의 제조방법에 관한 것으로, 더욱 상세하게는 야채/과일을 세척하는 세척단계; 상기 세척된 야채/과일을 100℃에서 20초간 가열하여 원료 내에 함유된 세균, 대장균군을 살균하는 가열살균단계; 상기 가열살균된 야채/과일을 냉각하는 냉각단계; 상기 냉각된 야채/과일에 유산균주를 접종하여 폴리페놀성분의 파괴를 방지하는 유산균주 접종단계; 상기 유산균주가 접종된 야채/과일을 25℃에서 7일간 숙성하는 저온숙성단계;를 포함하여 이루어지는 것을 특징으로 하는 야채/과일 발효액 제조방법과 상기 발효액을 이용한 발효유 및 발효푸딩의 제조방법에 관한 것이다.

The present invention aims to provide a method for preparing an oriental medicine composition having an effect of enhancing an immune system against atopy and an anticancer effect based on traditional medicine so as to find solution for atopy. The method includes the steps of: (a) preparing medicinal herbs including Acanthopanax senticosus, Houttuynia cordata, wild rice, dried gingers, cinnamon, jujubes, and dried tangerine peel; and (b) extracting the medicinal herbs at 100-120 deg. C using hot water. The medicinal herbs desirably comprise 14-20 parts by weight of Acanthopanax senticosus, 14-20 parts by weight of Houttuynia cordata, 5-12 parts by weight of the wild rice, 14-20 parts by weight of the dried gingers, 5-12 parts by weight of cinnamon, 14-20 parts by weight of the jujubes, and 14-20 part by weight of the dried tangerine peel.

PURPOSE: A producing method of a blueberry beverage pre-mix composition having anti-oxidative function is provided to enable users to add a liquid beverage to the composition to obtain a blueberry beverage. CONSTITUTION: A producing method of a blueberry beverage pre-mix composition comprises the following steps: mixing 3-10wt% of blueberries, 0.1-1wt% of sodium citrate, 0.1-0.6wt% of malic acid, 0.1-0.6wt% of silicon dioxide, 0.5-1.5wt% of flavoring agent, and the balance of saccharide; drying the mixture; and separating the dried mixture into particles having the size of 0.01-0.1mm. The blueberries have a form selected from blueberry powder or blueberry granules.

PURPOSE: A manufacturing method of lactic acid bacteria fermented product is provided to use lactobacillus plantarum PMO08 having excellent survival rate in the stomach, intestine adhesion ability, fermentation capacity about vegetable materials, anti-cancer or antibacterial activity. CONSTITUTION: Raw materials including vegetable materials are cultivated and fermented lactobacillus plantarum PEO 08 (KFCC-11028). The vegetable materials are selected in among Angelica keiskei, tomato, daucus carota, red cabbage, wild parsley, pumpkin, aloe, prune, blueberry, pomegranate, grapes, kiwi, times and apple. The lactic acid bacteria fermented product is a lactic acid bacteria fermented drinking product. A composition for anticancer includes the lactobacillus plantarum PMO 08 (KFCC-11028) as an active ingredient. The cancer is a colon cancer. An antibiotic composition includes the lactobacillus plantarum PMO 08 (KFCC-11028) as an active ingredient. The antibiotic composition is specific to a microorganism selected in a group consisting of Salmonella typhimurium, Staphylococcus aureus and Escherichia coli (E. coli).
