A meat slicing apparatus is disclosed, wherein the apparatus is capable of high-speed slicing of meat having large skeletal bones therein. The apparatus has a blade composed of a steel alloy that is approximately 5 to 10 times greater in compression strength than typical steel. The blade has an involute shape for withstanding the stresses incurred when slicing through bones having compression near that of steel, e.g., pork loin bones. The meat slicer includes a mechanism for securing a position of a meat section to be sliced so that the meat section stays in place during a slicing process, thereby reducing the risk of misalignment of the meat section with the blade. Thus, without such misalignments, there is a reduction in blade failures, shattered bones, bone fragments, and bone dust. Also, the securing mechanism reciprocates between securing the meat section for slicing and releasing it sufficiently for indexing toward the blade between slicing operations.

A de-boning machine comprises a pair of dies which are adapted to close around a meat portion in which a bone is located such that the meat is displaced laterally from the bone in response to closing of the dies while the bone remains in tact. The dies preferably have opposite disposed de-boning faces in which a bone locating recess is formed. To reduce the likelihood of damage to the bone resulting from closing of the dies, the bone receiving recess is filled with a resiliently deformable material such as a food grade rubber. In order to separate the meat which has been laterally displaced from the bone, a cutter is provided laterally outwardly from the bone receiving recess, the cutter being operable upon final closing of the dies. In order to prevent over-compression of the resilient liner, a yieldable support is provided at at least the critical support areas, the yieldable support being adapted to yield to prevent excessive compressive loads being applied to the bone as a result of compression of the liners. The mechanism also includes a loading device which permits individual meat pieces to be loaded into the de-boning dies as required in use. The loading mechanism preferably includes a clamping mechanism which serves to clamp a bone which will be located outwardly from the dies during the boning operation. The mechanism being arranged to permit movement of the gripper relative to the de-boning dies to rip the blade bone from the meat which surrounds it and to separate the bladebone from the arm bone.

The invention provides an improved fish filleting board including an elongated body having a major top surface. A recess in the top surface defines a floor providing a minor support surface disposed below said major top surface (in the operational position of the board). This minor support surface is arranged to receive and support the head of a fish in approximate alignment with the spine of the fish after removal of the first fillet therefrom while at the same time the cut portion of the fish body lies flat on the major top surface with the spine thereof lying parallel to it. An abrupt step is defined between a portion of the top surface and the floor of the recess and against which the cut portion of the fish head may be lodged to stabilize the fish during removal of the second fillet. The support and stability afforded by the above recited structures enable filleting techniques to be used which result in a considerably higher yield insofar as the second fillet is concerned.

To move the lower jaw away from the upper jaw in order to remove the lower jaw a hook member engaged the lower jaw and pulls it open by means of a foot-operated piston-and-cylinder unit. Another piston-and-cylinder unit forcibly drives the first and second members toward each other to firmly clamp the head therebetween.

This disclosure relates to a bone holding mechanism for supporting a bone by one end thereof while meat stripping operations are performed. In one of its embodiments, the invention relates to an apparatus which holds the tibia bone with the meat thereon while removing the fibula bone prior to the meat stripping operation. In another embodiment of the invention, the mechanism holds the tibia bone while the entire meat is being stripped. In each embodiment, the bone holding mechanism comprises a pair of cam-controlled, resiliently biased, movable jaws. In response to insertion of a bone, a triggering mechanism allows the jaws to move toward each other to hold the bone from rotational and longitudinal movement. In a more specific aspect of the latter embodiment, a sliding gate, in response to the triggering mechanism, is moved into a position adjacent to the ends of and surrounding the jaws to hold the bone from movement while deboning operations are performed. At the completion of the deboning operation, the jaws are released, and the bone is released from the holder.
