A method of extracting roasted and ground coffee is disclosed. Exraction water is fed to one end of an extraction vessel containing roasted and ground coffee, and coffee extract is with drawn from the other end. Flow of water to and from the vessel is intermittently halted, and extracted roasted and ground coffee is intermittently discharged from the vessel, while a portion of unextracted coffee is charged to the vessel at the other end. The movement of coffee in the extraction vessel is countercurrent relative to the flow of the extraction water. The method of the present invention is less complex, is more easily controlled, requires a lower capital investment and produces a more aromatic coffee extract of better flavor balance.

A method and an apparatus for the continuous extraction in counterflow of powdered material such as roasted and ground coffee-beans which is moved through an extraction vessel by means of a flowing liquid which is supplied to the extraction vessel at the one end of said vessel and is discharged from the vessel at the opposite end thereof. The powdered material to be extracted is supplied to the vessel in fractions, the fraction with the largest grain being supplied closest to the discharge of the extraction liquid so that the large grains have a long residence time in the extraction vessel, and the fractions of the powdered material having the smallest grain sizes being supplied closer to the inlet for the extraction liquid so that the small grains have a shorter residence time in the extraction vessel.

Slurry containing solid to be "extracted" is introduced to the top of a tower (1), the Fig. (not shown) at (3) and extracting liquid to the bottom of the tower at (7). Desired extract is withdrawn through an annular filter screen (2) (surrounding the tower near its top) to a tank (5). At intervals, and for a short space of time, outlet valve (9) from tank (5) is closed and the contents of tank (5) are discharged back through screen (2) to remove filter cake. At the same time a large amount of "extracted" solids and liquid is discharged from the tower base. Instead of, or together with, discharge of solids from the tower base, a large amount of slurry may be introduced at (3). Preferably the liquid part of the slurry is extract previously withdrawn. The slurry may be fibres from a cellulose digestion process suspended in waste liquor; or beet chips suspended in unrefined juice, or sand mixed with oil (extracting liquid; solvent). Bone meal or ores may be leached with water or dilute acids; filter agents such as diatomaceous earth may be washed.

This invention relates to a process and apparatus for the production of an aroma flavor concentrate from aroma- and flavor-bearing substrates, especially roasted and ground coffee. More particularly, the invention is concerned with a process for continuously de-aromatizing and desorbing aroma and flavor constituents from said substrates by passing wet steam counter-currently through a continuous columnar bed of said substrate, said bed flowing upwardly through a substantially upright vacuum-tight desorption column. Wet steam is applied in an amount and manner to form and maintain a substantially stationary desorption zone in said flowing columnar bed at a finite distance above a bottom inlet of said upright desorption column. The stationary desorption zone is formed by the condensation of the wet steam as it passes into a progressively cooler temperature gradient in said flowing columnar bed. The temperature gradient is created by the continuous introduction of chilled fresh substrate through the bottom inlet. A vaporous aroma flavor fraction and a desorbed soluble solids fraction are collected in separate cold traps in communication with said column at about said stationary desorption zone.
