摘要: Batter is applied to food products by depositing the products atop a coating pan which vibrates such that the products are transported along the pan. As this occurs, batter is supplied atop the coating pan and the products. The coating pan is preferably configured such that the products tumble across the pan, thereby better ensuring that the products are coated on all sides with batter. The products are then received on a vibrating drainage pan having a perforated drainage pan surface, whereby excess batter drains from the batter-coated products through the perforations as the products are transported across the drainage pan. Batter-coated products leaving the drainage pan can then be received by a fryer, oven, conveyor, or other food processing equipment.

摘要: A system for processing pieces of protein includes an optional flour applicator that applies a coating of flour, and optionally seasoning, to uncooked protein pieces; an optional seasoning applicator that applies a coating of seasoning on the uncooked protein pieces; a packaging machine that receives uncooked protein pieces, optionally coated with flour and/or seasoning, and retains the optionally coated, uncooked protein pieces in pouches; a batter applicator that deposits a batter made from flour containing gluten directly into the cooking pouches; the packaging machine programmed to vacuum seal the cooking pouches, thereby coating the uncooked protein pieces with the batter in the cooking pouches to make batter-coated uncooked protein pieces; and a heating unit programmed to completely cook the batter-coated protein pieces in the pouches for a time and temperature selected to completely cook the protein pieces and leave the batter sufficiently tacky to adhere to breading.

摘要: A food product gripping mechanism is provided. The food product gripping mechanism includes a shaft connected to a hub. A release mechanism has a first passage in fluid communication with a second passage. The second passage is configured to allow the shaft to pass therethrough. A tension member is positioned partly within the first passage of the release mechanism. A guide spool is configured to receive a portion of the tension member and further configured to allow the shaft to pass therethrough and a plurality of tongs is connected to the hub. The plurality of tongs are configured for a contracted orientation and further configured for rotation to an expanded orientation. The plurality of tongs are further configured to grip a food product without piercing a skin of the food product.

摘要: A cartridge assembly (3) of a 3D printer system for printing a plastic substance, such as a dough, comprises a refillable cartridge (31) and a punch-fill adapter (32) having a circumferential cutting edge (26) and being provided with a punch-fill connector (24) to form a manually releasable inter-connection between the cartridge and the punch-fill adapter. When said inter-connection is effective, the cartridge assembly is effective as a manual tool for punching, by means of said circumferential cutting edge, punched slices out of a supply slice of said plastic substance, and thereby for automatically inserting said punched slices into the inner space of the cartridge. Thanks to this punch-fill connector the manual (re)filling of the cartridge can be performed more easily and more reliably.

摘要: A method of preparing a high fat extruded protein product includes feeding water, a first fat, and a blend of plant proteins to an extruder to produce an extruded protein mixture. The extruded protein mixture is directed through a cooling die and divided into pieces, with the pieces being subsequently tumbled with oil. The resulting high fat extruded protein product will have at least 15-23% total fat by weight and, upon cooking, exhibits a desirable grease-out effect (e.g., reminiscent of a traditional pepperoni product). The blend of plant proteins preferably includes soy protein, wheat gluten and a grain or starch-based ingredient, and makes up at least 40-50%, by weight, of the high fat extruded protein product.
