摘要: Disclosed is a method for preparing an easy-to-swallow composite gel based on high-pressure shear induction and belongs to the technical field of food processing. Marine products are used as raw materials. A cross-linking degree of thermally denatured proteins and a combination degree of functional oil are synchronously regulated, calculated and controlled by one-step of emulsion filling and protein cross-linking. A composite gel prepared has low strength, high water/oil retention rate and the properties of “soft” easy-to-swallow foods. The composite gel is enhanced in efficacy by nutrition regulation, and the prepared easy-to-swallow composite gel achieves precise nutrition regulation. The composite gel is differently shaped by 3D printing according to different people's needs to improve consumers' appetite for easy-to-swallow foods. The utilization rate of marine resources is fully improved, a fish meat base material can be prepared from leftover processed minced fish meat, so the added value of products is increased.

摘要: A method of printing with coffee-based ink comprises providing a thermal ink-jet cartridge having a quantity of a coffee-based ink disposed within; receiving optical density data from a user via a touch-screen computerized interface, where the data describes an optical density of the coffee-based ink present within an ink-jet pod; and computing a customized droplet-size for the coffee-based ink in its current state within the thermal ink-jet cartridge. A suitable printing apparatus can include coffee-based ink in a cartridge, an image-processing system, an image processing module for determining, inter alia, droplet size and missing/defective nozzles, and a nozzle-compensation module. Suitable ink formulations are human-edible and aqueous.

摘要: An automated food preparation system includes a sauce-dispensing system with sauce reservoirs, a scanning head, and tubes. Each of the sauce reservoirs is configured to contain a respective sauce. The scanning head includes openings each coupled with a respective sauce reservoir via a respective tube. A conveyance system transports a foodstuff between first and sauce positions. The scanning head is movable to dispense a selected sauce onto one or more regions of the foodstuff. A motor assembly is mounted to a mounting structure. The motor assembly is drivingly coupled to the scanning head and rotates the scanning head relative to the mounting structure. The scanning head includes a plate and a cylindrical shroud fixed relative to the plate. The openings extend through the plate. The plate is disposed within a cavity defined by the cylindrical shroud. The motor assembly rotates the plate and the cylindrical shroud about a longitudinal axis.

摘要: Dried coated food pieces are produced by applying a composition to a surface of food pieces to produce coated food pieces. The composition includes water and a soluble solids component having a soluble solids content including erythritol in an amount more than 10% and up to about 50% by dry weight of the soluble solid content and sucrose in an amount of about 50% and up to about 90% of the soluble solids content. No more than 10% by dry weight of the soluble solids content is other than erythritol and sucrose. The coated food pieces are dried to form dried food pieces having at least a partial coating. The coating includes at least a portion of the sucrose in crystal form and at least a portion of the erythritol in crystal form. The coating has a crystallinity of about 20% to about 60%.

摘要: The presently disclosed subject matter is directed to a system and method of preparing personalized nutritional and/or pharmaceutical formulations using additive manufacturing technology. Active pharmaceutical or dietary supplement ingredients are suspended in thixotropic stable carrier medias. The thixotropic suspensions are deposited onto a surface of a solid substrate, which can be a snack bar or small wafer used as a mechanical carrier. The disclosed system enables each additive active ingredient to be variably dosed based on a formula that is determined for each specific individual and manufactured on demand. Once the active ingredients are deposited on substrate, the entire assembly can be enrobed with one or more edible solid coatings to seal the active ingredients and provide taste-masking agent characteristics to the assembly.
