    Abstract: A cooking or baking oven can include a hood having a vent outlet and a cooking chamber having a rack positioned therein. The cooking or baking oven can also include a heating chamber separated from the cooking chamber, a fuel burner, a fuel burner blower operably coupled to the fuel burner, a burner tube having an inlet end and an outlet end, the inlet end coupled to the fuel burner, and a flue having an inlet end coupled to the outlet end of the burner tube and an outlet end coupled to the hood, the flue having an opening. The cooking or baking oven can also include a damping system having a damper lid coupled to the flue, the damper lid moveable between an open position and a closed position, the damper lid in the closed position covering the opening; a damper motor; and a damper arm coupled to the damper lid and the damper motor, the damper motor rotatably moving the damper arm to move the damper lid between the open and closed positions. Related systems and methods are also provided.

    Abstract: A convection oven having one or more intermediate air plenums is disclosed. An intermediate air plenum placed within an oven cavity defines the bottom of an upper cooking chamber and the top of a lower cooking chamber. Each intermediate air plenum comprises a left side air inlet for receiving heated air from a left side air channel located on a left side cavity wall of the oven cavity, a right side air inlet for receiving heated air from a right side air channel located on a right side cavity wall of the oven cavity, a top plenum surface including a plurality of top air outlets configured to direct a portion of the heated air upwards, and a bottom plenum surface including a plurality of bottom air outlets configured to direct a portion of the heated air downwards. The top and bottom plenum surfaces are preferably shaped to optimize even distribution of heated air flow into the oven cavity.

    Abstract: A computing device receives a request to render an optimized display of selected objects on a user interface. The computing device analyzes a layout associated with the selected objects by determining a category of each of the selected objects, a location of each category within the location, and an optimized route between each category. The computing device analyzes routes to the locations by determining least optimal times associated with each location, a time to arrive and complete the optimized route at each location, and an order to the locations to optimize arrival time at a time other than the least optimal times. The computing device renders an optimized display of the selected objects on the user interface with an optimized route to each location and an optimized display of the selected objects in an order corresponding the the optimized routes between each category within the location layouts.

    Abstract: A conveyor-type oven is particularly well suited for cooking food products such as pizza. The oven may comprise a housing defining a baking chamber, and a primary chamber that is positioned beneath the baking chamber, the housing having an opening at each of the two longitudinal ends of the baking chamber. A continuous conveyor belt transports food to be cooked through the baking chamber, and a source of hot air is arranged to introduce hot air into the primary chamber. An upper plenum assembly is disposed in the baking chamber and includes a plurality of orifices from which to discharge hot air downwardly towards the conveyor belt, while a lower plenum assembly is disposed in the baking chamber and includes a plurality of orifices from which to discharge hot air upwardly towards the conveyor belt. Ducting interconnects the primary chamber with the upper and lower plenum assemblies, and one or more fans are operable to transport hot air from the primary chamber through the ducting to the upper and lower plenum assemblies. The conveyor-type oven enables fast, even cooking of food products while maintaining a relatively small floor-space footprint.

    Abstract: Food service equipment comprises a multiple-pass feeder conveyor and toaster which comprises an upper inclined food product infeed conveyor ramp for causing the food products to proceed in a first direction extending from the rear of the appliance toward the front of the appliance and onto the upper run of a first upper endless conveyor. The upper run of the first upper endless conveyor conveys the food products into a semi-circular return product feeder which causes the food products to be conveyed in a second opposite direction extending from the front of the appliance toward the rear of the appliance and into an entry space defined by means of the lower run of the first upper endless conveyor and the upper run of a second lower endless conveyor, the two conveyors being synchronized together. The pair of conveyors convey the food products between heated platens respectively associated with the two conveyors whereby the food products are cooked or toasted. The cooked or toasted food products are discharged onto a lower inclined food product discharge ramp which is disposed substantially parallel to the first inclined food product infeed ramp such that the finished food products are conveyed in a third direction, parallel to the first direction, toward a finished food product platform from which the finished food products may be removed for serving to diners. Additional pairs of conveyors can also be incorporated within the system, in a vertically stacked array, so as to effectively increase the length of travel experienced by the multiple food products without increasing the footprint of the equipment.
