摘要: An apparatus for processing dispersions of solids in a fatty phase has at least two parts (1, 4) which can be driven with the aid of at least one drive and caused to rotate relative to one another, form a processing gap (6, g1, g2, g1', g2') between one another and are mounted relative to one another by means of at least one rotary bearing (2 or 3). One part is in the form of processing container (1) having at least one feed orifice (9) and at least one outflow orifice (11). The other part (4) is arranged essentially concentrically with the first part (1) and with the axis of rotation (A). At least one of the two parts (1 or 4) is provided with shearing tools (7, 8) on the surfaces (12, 16) facing one another. The processing container (1) is essentially conical, the cone having its smaller end face on the side of the feed orifice (9).

摘要: Heat is applied to a solid or semi-solid material in a cylindrical container in such a way that a precise, predetermined amount of heat is transferred to a horizontal layer of the material until it softens sufficiently to allow the heating element to sink into the material where it will heat the next layer. The container is rotated about a vertical axis, and a horizontally-oriented heating element is lowered into contact with the material to apply heat to a horizontal layer. The heating element is lowered through the material in a controlled manner to heat progressively lower layers within the container, until the whole container has been heated. The heating element may be heated by pumping hot water therethrough, or by other means. A container of hot liquid may be cooled in a similar fashion, by gradually raising a cooling element from the bottom of the container.

摘要: A tempering and coating plant for different masses has at least one, preferably two subassemblies (3 or 8 respectively), consisting of a tempering machine (4 or 9 respectively) and a coating machine (5 or 10 respectively), arranged on the left and the right of a driven conveyor belt (1) for the articles to be coated, whereby the tempering machine or tempering machines (4, 9) are fixed in position, and the coating machine or coating machines (5, 10) are provided such that they can move transversely to the running direction of the conveyor belt (1). A connecting line (11) is provided between the tempering machine (4 or 9 respectively) and the coating machine (5 or 10 respectively) of each subassembly (3 or 8 respectively). A flow pipe (12) is located between each tank for the respective mass and the associated tempering machine and/or coating machine of each subassembly unit. A return pipe (13) can be provided between the coating machine (5 or 10 respectively) of each subassembly (3 or 8 respectively). Each connecting line (11) and each return line (13) has at least two pipe sections which are joined together via an articulated joint (14) and which have further articulated joints (14 or 15 respectively) at their ends so that the coating machine (5 or 10 respectively) can be moved transversly without uncoupling of the lines.

摘要: An autoclave-type reaction vessel has a mechanism for stirring and recirculating the cocoa solution, the mechanism having a greater mechanical performance which allows for an increase in the efficiency of the various processing steps, in particular via an increase in the water content of the solution. In a closed vat (1), stirring elements (32 to 35) are mounted on a hollow rotatable shaft (6) driven by a back-geared motor (7). Some of the solution is drawn off at the bottom of the vat by an external pump (36) which delivers it up the inside of the hollow shaft (6) to a spraying head (41). Processing fluids (48, 49) such as neutral gases and alkaline solutions may be added to the solution before it reaches the pump (36).

摘要: A heat exchange device that can be used for continuously cooling or heating a slurry of food consisting of lumps in a non-viscous liquid. The device comprises several vertically spaced heat transfer trays in alignment with each other and each having an opening extending therethrough, that is not in alignment with like openings of adjacent trays, and having raised portions next to the openings to restrict the rapid flow of liquid through the openings, so the food slurry has to be pushed or scraped by slowly moving scraper members to each opening, where it can fall by force of gravity to an adjacent lower tray.

摘要: A method of tempering edible fatty compositions such as chocolate comprises controlling the temperature of the composition to a predetermined temperature, passing the temperature-controlled composition continuously through a heat exchanger, cooling the composition, monitoring the consistency of the composition, and using the results to control the cooling of the composition in the heat exchanger, the monitoring being effected by measuring the pressure difference across the heat exchanger using pressure transducers, measuring the load on a motor used for mixing or stirring the composition in the heat exchanger, or by measuring the viscosity of the composition with an in-line viscometer.

摘要: A vegetable fat is subjected to dry fractionation, i.e. without the use of solvents or detergents, with a view to obtaining a concrete fraction compatible with cocoa butter in one or two fractionation cycles. In each of these cycles, the fat melted beforehand is seeded with stabilized .beta. or .beta.' crystals thereof, the liquid is progressively cooled and the suspension obtained is pressed by the application of a progressively increasing pressure. The concrete fractions obtained may be used instead of cocoa butter as confectionery fats.

摘要: A scraped-surface heat exchanger comprises a stator surrounding a rotor, the stator having annular projections extending inwardly towards the axis of rotation of the rotor. Scrapers on the rotor scrape both blanks of each projection as the rotor rotates. The two blanks of each projection could be planar, the planes being substantially perpendicular to the axis of rotation of the rotor. Instead, at least one of the flanks could be sloping with respect to the axis of rotation.

摘要: A heat exchanger for flowable or fluent masses or media, comprising a hollow cylinder surrounded by a cooling or heating jacket, and a rotor coaxially arranged with respect to the hollow cylinder, rotatable relative thereto, and bounding together with the hollow cylinder a gap. The rotor carries scraper or stripper elements cooperating with the heat exchange surface of the hollow cylinder at the gap, these scraper elements serving to prevent the deposition of particles of the media at the surface. The scraper elements are constructed as plates arranged parallel to tangential planes of the rotor, these plates being radially displaceably guided at the rotor. The plates can be pressed by elastic means against the heat exchange surface of the hollow cylinder so that they bear thereagainst by means of two parallel lengthwise extending edges.
