Present invention relates to a palm oil separation process comprising the following steps: step a) subjecting a palm oil starting material to short-path evaporation to obtain a distillate and a palm retentate: and step b) subjecting the palm retentateobtained in step a) to a dry fractionation step to obtain a stearin fraction and an olein fraction. Present invention further relates a soft palm mid fraction or a hard palm mid fraction obtainable by the process according to the invention and to a fat composition comprising the hard palm mid fraction and a StOSt-rich fat. In addition, the invention relates to a confectionary product such as chocolate, a chocolate-like product, cocoa-based fillings and cocoa-based coatings. The invention also relates to the use of the fat composition as a cocoa butter equivalent. The aim of the invention is to increase the yield and purify of the stearin and olein fractions obtained.

The present invention patent application belongs to the field of mechanical engineering and consists of a system and process for palm oil extraction integrally configured for processing the entire fresh fruit (rachis, spikes and seeds or fruits) by stages of cracking, threshing, dynamic sterilization and subsequent pressing. Said disclosed system and process allow increasing the percentage of oil extraction with less equipment and a smaller workspace compared to that required by the already known conventional processes, as well as using smaller amounts of water and energy. Additionally, the disclosed system and process allow obtaining sterilized plant material with low humidity, which may be used as organic matter for composting or as fuel of the extraction system itself.

Provided herein are microalgae of a Thraustochytrid and a method for preparing bio-oil using the same, and more particularly, Aurantiochytrium sp. LA3 (KCTC12685BP) having bio-oil producibility, and a method of preparing bio-oil, particularly bio-oil having a content of omega-3 unsaturated fatty acids of 30% by weight or more based on total fatty acids, characterized by culturing the microalgae. The microalgae Aurantiochytrium sp. LA3 (KCTC12685BP) described herein has a rapid sugar consumption rate when being cultured using glucose as a carbon source, has a high oil content, allows cells to be cultured at a high concentration, and allows oil to be obtained in high productivity and a high yield, and thus, may produce bio-oil more economically and environmentally friendly.

An oil and fat composition is provided having superior operability and processability, in terms of a liquefying phenomenon of sugar, tackiness and texture of fried doughnuts, filling condition and hardness of shortening, and solidifying time of coating chocolate, by the superior crystallization-promoting effect. A palm-based fractionated oil and fat has 70-90% by weight of the tripalmitin content to triglyceride and 1-8% by weight of the unsaturated fatty acid content to total fatty acid. The oil and fat comprises a hard part obtained by, for example, performing a crystallization operation of palm super stearin with iodine value 10-17 so that the slurry SFC is 20% or less, and fractionating the slurry so that the hard part yield is 26% by weight or less. The fractionation is preferably performed so that a numerical value of the hard part yield/the slurry SFC is 10 or less.

A method and composition for reducing the cholesterolemic effect in mammals of ingesting a blended nutritional fat composition containing a palm mid-fraction (PMF) hardstock fat combined with an unsaturated vegetable oil. The composition is solid or semi-solid at 20° C. and fluid at 35° C., and includes between 15% and 45% by weight linoleic acid. The weight ratio of disaturated triglyceride (DST) molecules to trisaturated triglyceride (TST) molecules is greater than 10:1, and the PMF hardstock fat contains approximately 50% to 95% by weight DST molecules, the majority of which contain either palmitic acid or a combination of palmitic and stearic acids at the sn-1 and sn-3 triglyceride positions and either oleic acid or linoleic acid at the sn-2 molecular position.
