    摘要: The invention relates to a method for producing coated sterol powder, wherein a) a carbohydrate and/or a protein and/or a protein-containing auxiliary agent is dissolved or dispersed in water or in an aqueous suspension medium, b) said sterol and/or stanol particles are added to the solution/dispersion, c) the thus obtained solution is homogenised in a homogeniser or a colloid mill in the circuit, d) one part of the homogenate is extracted in a continuous manner from the circuit and directly e) introduced into a dry-spraying system by pulverisation and spraying. The coated sterol-containing particles produced according to said method are incorporated into food based due to their good wettability and without using complex equipment, and display, in particular, good organoleptic and sensory properties in drinks.

    摘要: The invention relates to a wet grinding method for producing sterol formulations having good wettability. According to said method, a) an additive selected from the group constituted by proteins, proteinaceous adjuvants, carbohydrates, cellulose derivatives, sugar alcohols, fruit concentrates and vegetable concentrates is dissolved or dispersed in water or in an aqueous suspension medium, b) sterol and/or stanol particles having a medium particle size of at least 1 mm are added to this solution/dispersion, c) the dispersion thus obtained is homogenized and size-reduced in a mill that works according to the rotor/stator principle, and d) is then optionally dried, with the proviso that the sterol and/or stanol particles are present in the final formulation with a particle size distribution of D90% of not more than 50 μm. Owing to their good wettability, the sterol-containing formulations produced according to this method can be incorporated into food items without complex technology and have good organoleptic and sensory properties especially when used in drinks and dairy products.

    摘要: The invention relates to a method for the production of oxidation-stable sterol formulations, wherein catechins and/or the derivatives thereof are added to the sterols or sterol esters, and to the formulations produced according to said method. The catechins are preferably used in an amount of 20 to 1000 ppm, based on the sterol or on the sterol ester. Green tea extract may be incorporated as the catechin formulation. The formulations containing sterols produced according to said method have very high oxidative stability and have no displeasing aftertaste.

    摘要: The invention relates to sterol fatty acid esters of average chained fatty acids, having a chain length of 8 and 10 carbon atoms in a fatty acid distribution C8 to C10 (weight ratio) from 95:5 to 5:95, preferably, fatty acid distributions of C8 to C10 (weight ratio) from 90:10 to 20:80 and in particular, distributions of the fatty acids C8 to C10 (weight ratio) from 64:36 to 50:50 or from 78:22 to 65:35, are used. Preferably, capric and/or caprylic acids are used as fatty acids. Said sterol compounds can be easily incorporated into food, in particular, into drinks and milk products based on their wettability and easy to melt properties at low temperatures without using complex equipment, and have good organolepetic and sensory properties, and improved stability in relation to commercial sterol esters having long-chained and unsaturated fatty acids.
