A multi-purpose cutting device for removing the spinal cord and spinal meninx lining of the spinal cord of a slaughtered animal which has been longitudinally cut in two along the length of the spinal cord. The cutting device comprises a rotary cutting tool having a hub with radially outwardly projecting cutting fingers equidistantly spaced apart around the hub. The cutting fingers have blunt ends and are of substantially uniform length. A pair of circular saw blades are rigidly secured to opposite faces of the cutting tool. The saw blades have a circumference that approximately matches the effective circumference of the working ends of the cutting fingers. In use, when the cutting device is powered by a drive motor, the cutting fingers and saw blades rotate in unison. The cutting fingers rotate to remove the spinal cord and spinal meninx from the carcass while the saw blades cut into bone along opposite sides of the meninx. The saw blades assist the cutting fingers in dislodging regions of bone material in which the spinal cord or meninx materials may be lodged.

A cutting assembly, (130) moves into the abdominal cavity adjacent to the diaphragm (119), and a cutting means (28) cuts the diaphragm (119) around the periphery. A brisket shearing means (21) cuts the brisket (20) with a shearing action along the brisket (20) from the abdomen and towards the neck end of the brisket (20). The reaction member (188) is pivotally movable relative to the brisket (20) about a rear end to generally follow the contours of the brisket (20). Head holding means (12) locates and clamps the head (10) against movement, and stretching means (15) stretches the neck of the carcass (8) so as to spread the atlas joint, and a cutting blade (156) moves along the line of the jaw (9) and through the atlas joint so as to sever the head (10). Splitting support means (81) is movable lengthwise along the carcass (82), an opposed pair of rolling or sliding spine tracking means (86) carried by the splitting support means (81) straddles, locates and restrains the spine against lateral movement while cutting means (87, 200) splits the carcass (82) at the tracking means (86).

A body of a butchered animal suspended at its hind legs by suspension conveying means is conveyed by means of a conveying table to a station for splitting the body into two halves along the spine, where the body and the conveying table become stationary and the body is turned through 90 degrees in a splitting position between body supporting means and pusher means which is indexed with the conveying table, so that the back of the body will face the body supporting means. Then, sensing means senses the presence of the body in the splitting position and actuates the body supporting means to bring it to an operative position to support the body, while the pusher means is also actuated to urge push rods extending through the conveying table into contact with the body to clamp it tightly to the body supporting means. At the same time, driving box mounting a saw therein and located behind the body supporting means moves downwardly along a guide frame from its uppermost position and the saw is automatically rotated to cut into the body, while water is splashed against the body, to thereby complete the splitting of the body when the driving box has reached its lowermost position. Upon completion of the splitting of the body, the driving box means is moved upwardly to its uppermost position and the body supporting means and the pusher means are returned to their inoperative position, while the conveying table is restored to its original position. A body splitting operation can be performed efficiently with a minimum of manual attention in a sanitary condition.

A safety guard for a scribe saw that protects the entire periphery of the saw''s circular blade when the saw is not in use, and that retracts to a preset depth for regulating the depth of cut desired when the saw is in use. The safety guard structure includes a fixed cover mounted to the saw for protecting one segment of the circular blade, and a movable cover pivotally mounted to the fixed cover for protecting the other segment. The movable cover is adapted to pivot between a closed position and an open position, the movable cover overlying the circular blade''s periphery for protecting against inadvertent contact when in the closed position and exposing the circular blade''s periphery for cutting when in the open position. A trigger is interconnected by latch linkage with the movable cover; the trigger is spring loaded toward a position at which the linkage is disposed over center so as to restrain the movable cover in the closed position against inadvertent contact, and is manually actuable out of the over center position so as to allow the movable cover to retract into the open position as the circular blade is engaged in a cutting attitude. The depth of cut is regulated by limiting retraction of the movable cover. The depth of retraction of the movable cover is adjusted by rotating a depth disc that is eccentrically mounted on the fixed cover. The disc''s periphery is in the nature of an adjustable abutment adapted to cooperate with a fixed abutment on the movable cover, the two abutments engaging or contacting one another to define the maximum limit of the movable cover''s retracting or opening movement.
