Abstract: An apparatus for slicing food product to produce food product slices. The apparatus includes a circular cutting head having an axis and comprising at least one knife assembly on the circumference of the cutting head, a knife extending axially inward and having a corrugated shape to produce a food product slice with generally parallel cuts, wherein the food product slice has a periodic shape characterized by peaks and valleys, and means for securing the knife to the cutting head, the securing means comprising a surface facing radially inward and having a corrugated shape. The corrugated shape of the surface of the securing means is shaped differently than the corrugated shape of the knife to minimize surface contact between unsliced food products and the cutting head.

Abstract: A cutting assembly for cutting a meat or food product passing along a path of travel and comprising a blade assembly including a cutting roller having a plurality of cutting blades radially mounted thereon and movable relative to the path of travel. A mating assembly interacts with the plurality of cutting blades to accomplish a multipoint cutting procedure which is facilitated by the concurrent rotation of the cutting roller and cutting blades as well as a linear reciprocal travel thereof transverse to the path of travel. A stabilizing assembly is provided to restrict the dimensional variance of the spacing between the cutting roller and mate roller through which the meat product travels and an ejecting assembly to remove cut portions from between the cutting blades and back onto the path of travel. The cutting assembly preferably includes a modular construction disposal within and removal from an operative position along a processing line associated with the path of travel.

Abstract: Apparatus for sizing a mix of randomly sized food pieces into chunks of a predetermined maximum length. The apparatus includes a carrier drum and a cutting drum mounted on parallel shafts which are interconnected for rotation in opposing directions. The carrier drum has a plurality of parallel longitudinal bars mounted equidistant around the periphery of the drum, spaced apart a distance equal to the desired maximum length of the food chunks. The cutting drum carries a plurality of elongated cutting blades mounted parallel to the longitudinal bars on the carrier drum and spaced apart the same distance as the longitudinal bars. The drums are aligned so that upon rotation of the drums the blades cooperate with the longitudinal bars to cut elongated food pieces carried on the surface of the bars into the nip between the drums, without striking against the bars. A conveyor mounted adjacent the carrier drum delivers a mix of randomly sized food pieces onto the carrier drum, with the longitudinal axes of the elongated pieces in the mix being aligned so that the elongated pieces are deposited on the longitudinal bars of the rotating carrier drum perpendicular to the axes of the bars and are carried into the nip between the counter rotating drum where they are cut to a desired length.

Abstract: A method and apparatus for the chopping of glass strands is disclosed. The back-up or cot roller for the chopping blades includes an annular cutting surface or ring which is mounted on an expandable wheel, such as an inflatable wheel. By varying fluid pressure within the inflatable wheel, variations in the resiliency of the cutting surface are realized. This allows for a smoother operation of the chopping system and increases the life of the cutting surface. Further, the expandable wheel around which the cutting surface rides will adapt for variations in the thickness of the annular cutting surface and still give a consistent mesh with the cutting blades. Thus, it is now possible to employ cutting rings having inconsistent inner and outer diameters and to resurface the cutting surface by grinding that portion of the surface which has been partially gouged by the cutting blades to an even surface once again and thus to reuse the cutting ring. This reduces replacement costs for the annular cutting surface rings or cots by further increasing their life expectancy, thus improving the efficiency of the chopping system.
