Hydrogenated pullulan is produced by the reaction of an aqueous solution of pullulan with hydrogen gas under pressure in the presence of suitable catalysts until the reducing property of the solution disappears. The hydrogenated pullulan is much more resistant to heat than pullulan and its aqueous solution hardly loses viscosity and is not colored under heat treatment. The hydrogenated pullulan is much less absorbable by the intestinal walls than pullulan so as to reduce more effectively the caloric value of foods when it is mixed with foods. Shaped bodies such as films, sheets, plates, capsules, containers, coatings and fibers are readily prepared in a conventional manner. The films are practically impervious to atmospheric oxygen and suitable as packaging material.

Polypeptides having the ability to specifically form connections of glucosyl units in alpha 1,3 on an acceptor having at least one hydroxyl moiety are presented. The polypeptides include i) the pattern I of sequence SEQ ID NO: 1, ii) the pattern II of sequence SEQ ID NO: 2, iii) the pattern III of sequence SEQ ID NO: 3, and iv) the pattern IV of sequence SEQ ID NO: 4, or derivates from one or several of said patterns, wherein the polypeptide furthermore has an aspartic residue (D) at position 5 of the pattern II (SEQ ID NO: 2), a glutamic acid residue (E) at position 6 of the pattern III (SEQ ID NO: 3) and an aspartic acid residue (D) at position 6 of the pattern IV (SEQ ID NO: 4). Methods for producing acceptors connected to glucosyl units in alpha 1,3 using the polypeptides are also provided.

The helical impeller consists of a pair of vertically spaced arms extending from the agitator shaft in opposite directions and arranged in twisted relationship, and at least one shearing paddle bridging these arms, and the turbine impeller consists of a rotating disc having at least one turbine blade attached thereto.

The present invention aims to provide a particulate composition containing pullulan, which can be produced without employing any complicated purification step such as solvent precipitation and, when formed into a film, exhibits a higher rupture strength compared to conventional ones; a process for producing the same; and uses thereof. The present invention solves the above object by providing a particulate composition containing pullulan which is produced from a culture obtained by culturing a mutant of a microorganism of the species Aureobasidium pullulans in a culture medium containing glucose and maltose as carbon sources, without employing a step of removing concomitant saccharides; contains a pullulan fraction and a concomitant saccharide fraction that are respectively insoluble and soluble in 75% by volume of methanol in water; has a percentage of 3% by weight or lower of the content of concomitant saccharides contained in the concomitant saccharide fraction against the content of total saccharides contained in the whole particulate composition, when determined based on the anthrone sulfuric acid method; and contains mannitol; and by providing the process of the same and uses thereof.

A method for obtaining a substantially biologically pure culture strain of Aureobasidium pullulans from a wild type strain by enriching the collected strain for organisms which grow as fungal yeastlike cells, growing colonies from isolated yeastlike cells and selecting those yeastlike cells which exhibit reduced pigmentation. Biologically pure culture strains obtained by the invention as well as methods for producing pullulan having decreased pigmentation and/or increased molecular weight are disclosed.
