The oxygen transport reactor-based oven is an oven for heating articles, such as bread, using oxygen transport reactor-based combustion in order to recycle carbon dioxide, rather than releasing the carbon dioxide into the environment. The oven includes an upper furnace chamber having a plurality of oxygen transport reactors disposed therein. A mixture of fuel and gaseous carbon dioxide is delivered to the interior of each oxygen transport reactor. Pressurized air is then delivered to the upper furnace chamber, so that oxygen from the pressurized air is driven through an ion transport membrane of each oxygen transport reactor to combust with the fuel. This combustion produces carbon dioxide, water vapor and heat. The generated heat is used to heat the articles to be heated, which are received within a heating chamber positioned beneath the upper furnace chamber.

A radiant panel is provided which is heated by means of hot air and which is positioned to heat one surface of the food product by radiant heat energy. The second surface of the food product is heated by means of a flow of hot air. The air is heated in a heating chamber and recirculated by means of a fan. The food product is supported on a conveyor belt and travels through the food preparation oven while it is being baked.

This invention provides an oven to produce a desired baking effect while simultaneously providing the bread with a desirable brown coloration in both its top and bottom surfaces. A unique feature of this oven is the provision of a top radiant refractory arch wall and top flame heating to effect a desired radiance to the refractory arch surface, and also to simultaneously produce a desired radiance to a horizontally disposed radiant plate suitably disposed above the bread travelling continuously there beneath. The oven of this invention provides for substantially flash baking of relatively thin bread discs with a suitable crust formation and coloration of both its top and bottom surfaces. This oven provides also a novel method of baking relatively thin bread material. This invention accordingly provides an indirectly fired novel baking oven having novel features, to wit: a tip refractory oven surface for baking purposes supplemented by a specifically provided radiant heat-bank plate for providing a desirable brown crust in a minimum of time. The bread discs travel on a conventional metal conveyor continuously beneath the radiant plate so that a vast number of bread loaves are bakes to perfection in a minimum of time.

A once-through baking oven has a plurality of oven modules which together form a once-through baking space. A heat-exchange heating device for indirect heating of the once-through baking space has a heating medium outward-flow pipe arrangement, a heating medium return-flow pipe arrangement and at least one intermediate radiator pipe arrangement having a plurality of heat exchanger pipes The heating medium flows in two adjacent heat exchanger pipes in opposite flow directions to each other. In an alternative embodiment of the radiator pipe arrangement, it runs in a spiral or meander shape in such a way that the heating medium flows in two adjacent pipe sections in opposite flow directions to each other. This results in a once-through baking oven that can be operated efficiently and adapted to different throughput requirements.

A method and system for continuous high-speed commercial cooking and cooling using pre-heated dough ingredients for making products such as tortillas, provides predetermined specific heating patterns in an infrared cooking sequence which assures consistent product characteristics. Dough blanks formed of pre-heated ingredients are conveyed past predetermined sequences of infrared burners within an oven along a series of paths to sequentially expose alternate sides of the pre-heated ingredients to intensive radiant heating patterns each of decreasing heat intensity and of predetermined short time duration. Conveyors within the oven are synchronized to maintain blank spacing similar throughout the cooking process and turnaround chute means reverse and transfer blanks from one conveyor to another for alternatively exposing opposite sides of the articles to the radiant heaters. Burner cooling and fume exhaust is obtained by introducing air near the center of the oven and discharging it at the oven ends. Ignition of gas burners and flame sensing is accomplished through full burning pilot tube means extending the length of each bank of radiant heating burners. A subsequent high velocity and lengthy travel of the cooked tortillas while they are being individually exposed to ambient air serves to cool the tortillas and to permit escape of any residual internal free moisture, thereby avoiding the subsequent release of moisture or softening of the cooked and attractively browned surface skin layers for enabling stacking without sticking together.
