摘要: A belt cooking apparatus (10) includes a lower frame structure (12) and an upper frame structure (14) in registry with the lower frame structure. A lower cooking conveyor belt (16) is supported by the lower frame structure (12) and correspondingly an upper conveyor belt (18) is supported by the upper frame structure (14). Heating element assemblies (20) are mounted on the lower frame structure (12) just below the lower cooking belt (16) as well as on the upper frame structure (14) just above the upper cooking belt (18). Food products are cooked while positioned between the upper and lower moving cooking conveyor belts (16) and (18) by heat generated by the heating element assemblies (20) while being advanced by the conveyor belts.

摘要: An apparatus and method for cooking, heating, or drying in which, as items or materials are conveyed through a heating chamber by a linear, spiral, or other type of conveyor, hot combustion product gases are delivered upwardly through an upwardly extending first annulus or other flow gap which is closest to the conveyor. The hot combustion product gases are then delivered downwardly through the heating chamber into contact with the items or materials on the conveyor. Next the combustion product gases are delivered from the lower portion of the heating chamber into the lower portion of a second annulus or other flow gap or passage. The second flow gap or passage is separated from the heating chamber by the first annulus or other flow gap. Subsequently, the combustion product gases are delivered upwardly through the second flow gap or passage.

摘要: A method of producing an edible food product includes the step of forming a vessel core with a first material having a first level of susceptibility to heating by induction. The method also includes the step of casting an apron of a second material with a second level of susceptibility to heating by induction lower than said first level around at least a first portion the vessel core in an in situ casting process to form a clad cooking vessel having a cooking surface. An uncooked food product is then disposed on the cooking surface of the clad cooking vessel and heated to produce the edible food product by subjecting the vessel core to a magnetic field.

摘要: A new electric broiler is disclosed. The broiler includes a housing having a cooking chamber, and a cooking surface in the housing. Upper and lower electrical heat sources are provided in the cooking chamber above and below the cooking surface. The lower heat source includes a removable heating module having an electric heating element and a quick connect/disconnect connector for quick electrical connection and disconnection of the electric heating element to and from a quick connect/disconnect connector on the housing. The broiler also includes a module holder on the housing for holding the removable heating module. The heating module is removable from the holder for quick replacement of the module.
