    摘要： A pastry making machine comprises a conveyor with product molds on the matrices. Stamps are adapted to cover matrices. A dough dispenser with a hopper is installed at the beginning of the conveyor. There are also an oven, a product unloader, a blower with rolls, a manipulator equipped with a lifting mechanism and magnetic or mechanical grippers for the stamps, and a control unit. The surface of the rolls is profiled with separating cells forming longitudinal and transversal rows. The dosing head has at least one row of separating chambers, with channels discharging dosed dough pieces. An induction heating assembly is positioned along the oven. Each matrix is mounted on a wheeled cart, attached to the conveyor. One embodiment has a current-conductive profile connected to the heating assemblies of the stamps. Another embodiment has its heating assembly stretched alongside the whole oven heating the stamps and matrices. The machine improves product quality.

    摘要： A food production system creating folded par-baked units (e.g. mini tacos) for frying, including a sheeter for continuously creating a succession of substantially flat raw dough units and an oven having a plurality of hanging conveyors (e.g. chains). The hanging conveyors are narrow so that the raw dough units raw fold down on either side thereof to form folded dough units. The oven includes a first plurality of cross-burners to pre-heat the hanging conveyor for transferring shape-setting heat directly from the hanging conveyor to the folded dough units. The oven further includes a second plurality of substantially longitudinal shape-setting burners that are substantially in parallel with and adjacent to the top dough carrying side of the hanging conveyor for providing further shape-setting heat to the folded dough units. The oven discharges par-baked units ready for frying.

    摘要： The invention relates to an assembly, discharge device and method for the production of pancakes. The assembly includes a conveyor having a heatable carrier on which the pancakes to be made are conveyed; and, a first discharge device wherein the first discharge device is provided with several nozzles for each time discharging a preset quantity of pancake batter for the nozzle in question onto the carrier. The preset quantity of pancake batter for the nozzle in question and a conveyance speed of the conveyor are set such that the preset quantity of pancake batter for the nozzle in question forms a line on the carrier in the conveyance direction. The several nozzles may be connected to a reservoir for the pancake batter. The discharge device may include a pressure regulator for keeping the pressure in the reservoir substantially constant during discharging pancake batter.

    摘要： A matchbox oven is disclosed. The matchbox oven includes a housing, a slider, a mover and a heat source. The housing includes a cavity having a first and second openings. The mover moves the slider in and out of the cavity through the first and second openings. The heat source provides heat to the cavity for heating up any food item placed on a portion of the slider located within the cavity. The slider, which is configured to receive food items, includes multiple stoppers to serve as oven covers for preventing heat within the cavity from escaping through the first and second openings. When necessary, a portion of the slider can also be utilized as a heat sink for lowering the temperature of the cavity during oven operation.

    摘要： The baking device produces endless strips of baked goods from pourable baking dough. A cylindrical baking ring of metal is disposed to rotate about its central axis, while it is supported outside its center. The baking ring has one or more endless baking surfaces on which the strips are produced. A stationary depositing device deposits baking mass onto the rotating baking surface before the baking surface travels into a baking zone. A stationary receiving device removes the at least partially baked strips from the baking ring for further processing. A stationary electrical induction coil is disposed in the baking zone. The induction coil is arranged adjacent the baking ring so that the ring, as it moves through the magnetic field of the coil, is heated by induction for generating heat with which the strips are baked from below.
