The method involves injecting at least 0.15 gram of an inert gas into a container comprising the oxygen sensitive item and oxygen, without raising a pressure within the container above 10 psig, to form a barrier layer of the inert gas between the oxygen sensitive item and the oxygen in the container without displacing all of the oxygen from the container.

    摘要: A method and device for preserving wine or other oxygen sensitive items is disclosed. In some embodiments, the method involves injecting at least 0.15 gram of an inert gas to a closed container comprising wine and oxygen. In some embodiments, the device has a housing, a pressure indicator, a pressure sensor, and a one-way valve. The housing is configured to seal an opening of a wine bottle. The housing has a closure side configured to be in communication with an interior of the wine bottle. The housing has an input channel extending through the housing. The pressure sensor is within the housing and is in communication with the closure side. The one-way valve is in the input channel. The pressure sensor is configured to move the pressure indicator to an indicating position when a predetermined amount of pressure is reached at the sensor.

    摘要: The present invention provides a method of reducing chill haze in a protein containing liquid (especially beverages resulting from fermentation such as beer and wine) by contacting the liquid with silica microgels having an average microgel diameter of at least 18 nm, more preferably at least 45 nm, and most preferably at least 70 nm. It has now been discovered that microgels having an average microgel diameter of less than about 18 nm do not adequately reduce chill haze of a protein containing liquid. In particular, while microgels having an average microgel diameter of less than about 18 nm cause the coagulation of haze-forming components, these components remain suspended in liquid and continue to cause haze despite allowing the liquid to settle for long periods of time. Conversely, it has now been discovered that microgels having an average microgel diameter of at least about 18 nm cause the coagulation and precipitation of haze-forming components and the rapid settling thereof without the use of an organic polymer which acts as a flocculating agent.

    摘要: A volumetric displacement preservation system for preserving a volume of flowable substance in a vessel. A fluid exchange structure has a stopper, a head portion, and a fluid exchange valve with a first condition where fluid inlet and exhaust pathways in the fluid exchange structure are simultaneously closed and a second condition where the fluid inlet and exhaust pathways are simultaneously opened by conduit joining portions in the fluid exchange valve. A chamber retains a volume of preservative gas and is connected to the fluid inlet pathway externally to the vessel. The preservative gas can be supplied from the chamber into the vessel through the fluid inlet pathway as liquid is exhausted through the fluid exhaust pathway. The chamber can be replenished from preservative gas displaced from the vessel in a reverse volumetric displacement process or from preservative gas supplied by a preservative gas production canister.

    摘要: An apparatus for the preservation of still beverages is disclosed. The apparatus includes a vacuum tank capable of maintaining a standing vacuum. The apparatus also includes a vacuum pump connected to the vacuum tank. The vacuum pump reduces the pressure in the vacuum tank to create the vacuum. A vacuum line is connected to the vacuum tank, and at least one valve head is connected to the vacuum line for receiving a bottle having a stopper placed therein. The valve head exposes the bottle and stopper to a vacuum. Upon exposure to the vacuum, air in the bottle is substantially evacuated and is prevented from reentering the bottle by the stopper.

    摘要: Beverages such as beer in a sealed conventional bottle or can for individual consumption are provided with a head of froth after the can or bottle is opened by subjecting the beverage to an excitation treatment that causes gases dissolved in the beverage to come out of solution and form a head of froth having small uniform bubbles throughout. The gases dissolved in the beverage are carbon dioxide and nitrogen in amounts of 0.8 to 1.8 vols./vol. and 0.015 to 0.035 vols./vol., respectively. Excitation is performed by injecting liquid and/or foam into the beverage or by passing the beverage through a bed of small discrete sharp edge polystyrene granules.
