The present invention relates to an edible water-continuous oil-and-water emulsion having a pH in the range of 2.0-5.0, said emulsion comprising: 5-90 wt.% of an oil phase; 10-95 wt.% of an aqueous phase; 0.3-30% by weight of the aqueous phase of one or more egg yolk granule proteins selected from high density lipoprotein (HDL) and phosvitin; and from 0.05% up to 10 wt.% of the aqueous phase of one or more egg yolk plasma proteins selected from low density lipoprotein (LDL) and livetin; wherein the weight ratio of the egg yolk granule proteins to the egg yolk plasma proteins exceeds 1:1. It was discovered that egg yolk granule proteins can advantageously be used to stabilise acidic water-continuous oil-and-water emulsions such as mayonnaise and dressings.

O processo em questão refere-se à obtenção de clara de ovo desidratada sem sabor e sem odor, a partir do recobrimento da clara de ovo em pó com polímeros à base de celulose, tal como metilcelulose, etilcelulose, hidroxietilcelulose e éter de celulose. O processo consiste em uma primeira etapa de mistura da clara de ovo desidratada com a base de celulose, seguida de mistura de celulose em pó com um meio aquoso ou hidroalcoólico até a completa solubilização da celulose em pó. Em seguida, a primeira mistura é adicionada à segunda e, então, é realizada a remoção da parte líquida. O produto final obtido apresenta como características peculiares a ausência de odor e sabor, tendo a sua liberação e absorção no estômago, sendo indicado preferencialmente, para uso como suplemento alimentar.

A method of extracting a polypeptide from avian eggshell membranes. The method includes fermenting the avian eggshell membranes in a fermentation process, harvesting a fermented product, and processing the fermented product to extract the polypeptide. Prior to fermentation, the eggshell membranes are separated. Optionally, the eggshell membranes are dried. The processing of the fermented product can extract collagen, amino acids, or other high value polypeptides. Separating the eggshell membranes from eggshells may be performed using an acidic solution to assist in eliminating contaminants.
