The present invention is directed to a process for the manufacture of a formulation of β-carotene, wherein the β-carotene is embedded in a matrix of at least one modified food starch, and wherein the β-carotene in said formulation has a trans content ≥ 90% and a median particle size of less than 400 nm, and the E1/1 of said formulation is > 800, said process comprising the following steps: a) providing an aqueous suspension of β-carotene and at least one modified food starch (preferably OSA starch) to obtain an aqueous matrix; b) optionally wet media milling the matrix of step a) with milling beads, whereby the average diameter of the milling beads is ≥ 0.8 mm (preferably > 1.0 mm), to obtain a matrix of β-carotene, wherein the median particle size of the β-carotene is smaller than the median particle size of the β-carotene in the matrix of step a); c) wet media milling the matrix of step a) or step b) with milling beads, whereby the average diameter of the milling beads is in the range of from 0.1 to 0.8 mm (preferably 0.2 to 0.5 mm), to obtain a matrix of β-carotene with a median particle size of less than 400 nm; d) optionally removing the water of the matrix obtained in step c) to obtain a concentrated matrix; e) drying the concentrated matrix obtained in step c) or d) to obtain the formulation of β -carotene, wherein the β -carotene is embedded in the matrix of modified food starch, and wherein the β -carotene in said formulation has a trans content ≥ 90% and a median particle size of less than 400 nm, and the E1/1 of said formulation is > 800. The present invention is further directed to formulations obtained in such a process and to their use for coloring beverages and food, as well as to the beverages and food comprising such formulations.

One aspect of the invention is a red composition comprising quince juice wherein the quince juice imparts the red colour to the composition and wherein no sugar or acid is added. The invention provides for the use of a red composition comprising quince juice to colour a food product, a nutritional formulation, a food supplement, a beverage, an ink or a pharmaceutical product. A further aspect of the invention is a method of preparing a red composition comprising quince juice.

The present invention is directed to a clear liquid formulation comprising: a) at least one carotenoid, and b) at least one modified food starch, and c) at least one saccharide, and d) water, especially to a clear liquid formulation comprising a) 0.1 to 10 weight-% (preferably 0.5 to 5.0 weight-%, more preferably 0.5 to 3.0 weight-%, most preferably 1.0 to 3.0 weight-%) of at least one carotenoid, and b) 20 to 60 weight-% (preferably 30 to 50 weight-%) of at least one modified food starch, and c) 0.5 to 60 weight-% (preferably 0.5 to 30 weight-%, more preferably 0.5 to 20 weight-%, most preferably 1.0 to 10 weight-%) of at least one saccharide, and d) 35 to 75 weight-% (preferably 45 to 65 weight-%) of water, all amounts based on the total weight of the liquid formulation, whereby all amounts add up to 100 weight-%. The present invention is further directed to a process for the manufacture of such liquid formulations, as well as to beverages containing them. These beverages are also clear and color stable.

The present invention is directed towards a dry mix composition that can be used to produce multi coloured tablets. The dry mix composition can be used to achieve a multi colour effect for uncoated and coated tablets. Coated tablets include any and all coatings applied over tablets like film coating, enteric coating, polymeric coats and other similar coatings. The dry mix composition comprises of commonly used excipients incorporating a fixing agent and a suitable pigment colour. A process to manufacture multi coloured tablets using the inventive dry mix composition is also described. The invention can be applied to pharmaceutical, food products, confectionery, agricultural seeds, nutritional feeds etc. Furthermore, the application describes the formulation variances by which the invented technology can easily be implemented on commercial levels.

The invention provides method and compositions for the modulation of anthocyanin and proanthocyanidin production in plants. The methods of the invention allow creation of plants having novel phenotypes. Increased expression of anthocyanins and proanthocyanidins in plants may be used to increase the nutritional value of food plants for both human and animal consumption. Increased proanthocyanidin content also reduces the potential for bloat in animals fed certain forage plants low in condensed tannin content. The invention may also be used to modify plant pigmentation, and for nutraceutical and food colorant production.

A stabilized carotenoid-based pigmenter free of synthetic antioxidants for the addition to animal feed to add color to tissues of animals fed the animal feed. The carotenoid-based pigmenter contains free-form carotenoids obtained from natural sources through a saponification reaction. A natural antioxidant, such as grape seed extracts, green tea extracts, clove bud oil, clove leaf oil, Vitamin C, cinnamon leaf oil, oleoresin turmeric, tocopherol, tocotrienol, rosemary extracts and gallic acid or salts thereof combined with a diluent, preferably glycerol or a glycerol-like substance, is added to the pigmenter after the saponification reaction.
