    摘要: A heat-transfer vessel or tank for use in fermenting and aging bear, and like products, is near-cylindrical in configuration and cross-section, the near-cylindrical body being closed at either end by a dished head member in order to form a closed tank. Each side wall of the tank includes a cooling jacket. The tank is mounted on a frame of metal beams, and reinforcing cantilever members are rigidly connected to the frame and are secured to and embrace the cooling jacket. The cooling jacket is preferably of dimpled construction, and each dished head member is in the form of a torisphere.

    摘要: Methods and systems are provided for gravity-assisted winemaking and other fermentation processes. In one example, a method may include using gravity to process grapes or a fermentate from a first upper location to a lower location and using a bridge crane to transfer the grapes or the fermentate to a second upper location to be further processed. In certain examples, the lower location may be located on a lower level of a building and the first and second upper locations may be located on an upper level of the building. In an additional or alternative example, the method may include using the bridge crane to translate a punch down device along orthogonal axes, including lowering the punch down device into a vessel containing a liquid on which a cap of solids floats. In certain examples, the vessel may be transferred between the upper and lower levels using the bridge crane.

    摘要: An improved system and process for rapidly producing distilled spirits having characteristics associated with a much longer maturation process is provided. The method involves contacting wood with an amount of unmatured distilled spirit under heated conditions and contacting the resulting heat-treated spirit with actinic light. The disclosure provides embodiments where a spirit is sequentially processed through heat and actinic light treatment. The disclosure also provides embodiments where a heat-treated spirit is mixed with a spirit that has been separately treated with light to give characteristics of a mature spirit. Air may also be percolated through a mature spirit in a container with a headspace at a gauge pressure between about −25 inHg and about −30 inHg, until the alcohol concentration of the mature spirit is reduced by between about 1% to about 2% by volume, and until the total volume of the mature spirit is reduced by about 10% or less.

    摘要: Arrays of closely-spaced holes or cross-grain grooves are formed on the inside surfaces of the staves of a barrel, and/or on an elongated wooden member to greatly increase the amount of end grain wood exposed to the liquid and thereby increase the rate of aging the liquid. The holes and grooves in the staves extend only part-way through the wood in order to maintain the structural integrity of the staves.
