A block former (1) for the production of blocks of cheese (19) includes an upright drainage column (2) having a feed opening (3) for curd particles (4) at an upper end (5) of the drainage column (2). The drainage column (2) includes an inner wall (6) having an interior surface (7) against which a pillar of curd (8) formed of the curd particles (4) slides as the pillar of curd (8) moves downwardly through the drainage column (2). The upright drainage column (2) is divided into an upper part (9) and a lower part (10). The upper part (9) has an inner cross-sectional area that is less than an inner cross-sectional area of the lower part (10).

A device 1 for the longitudinal cutting of a wide food band 4 of a soft food mass, in particular a cheese mass, which is moved in a conveyance direction F on a conveyor belt 3, into a number of narrow strips,wherein a cutting cylinder rotating in the conveyance direction is provided, on which cutting cylinder a number of cutting disks 2 corresponding to the number of strips to be produced is mounted for the longitudinal cutting, wherein the cutting disks 2 are disposed coaxially to the rotational axis A and cut into the food band 4 with the edge thereof,wherein a comb 5 having a plurality of comb tines 6 is provided, which comb tines, in an operating position, engage into the intermediate spaces 7 between the cutting disks 2 during the longitudinal cutting in order to hold down the cut strips on the conveyor belt,wherein the comb 5 is held on a comb holder 8, which is held so as to be pivotable about the rotational axis A, wherein the comb holder 8 can be transferred from the operating position and a maintenance position by pivoting about the rotational axis A.

Method and device for cutting a soft food mass, in particular for cutting machine-processed cheese, such as processed cheese or mozzarella, whereby the food mass is present as a broad food ribbon of small ribbon thickness, whereby the food ribbon is fed by means of a conveyor belt with a travel speed leading to a longitudinal cutting system, in particular in the form of a cutting roller, which cuts the food ribbon with axially arranged cutting disks into parallel longitudinal strips, whereby the direction of rotation of the longitudinal cutting system corresponds to the travel direction of the food ribbon, whereby the cutting disks in each case have blades that are provided with at least one tooth, whereby the tooth height is greater than the ribbon thickness, whereby the peripheral speed of the cutting roller is adjusted in such a way that a tooth is immersed in the food ribbon when cutting with the tips of the teeth and creates a slot of a specific slot length in the food ribbon that moves in the same direction, whereby the slot created by the subsequent tooth is adjacent to the preceding slot.

A condiment composition comprising a high percentage of grated cheese in combination with a core of other lyophilised and/or dehydrated ingredients capable of imparting taste and/or flavour to the foodstuff to which the composition is applied and with a binding base comprising glucose syrup, vegetable fat and milk proteins is described. The binding base makes it possible to obtain a homogeneous composition which is readely soluble on contact with the moisture released by the food being dressed.

An improved hand-held, hand-crank operated rotary drum-type grater for cheese and the like is provided which has a housing that has portions which are slidably engagable with mouth adjacent lip portions of a predetermined collection vessel for grated material. The grater preferably utilizes a cage-type drum body having a cylindrical surface defined by a metal sheet having bladed perforations. The drum is insertable into either end of a cylindrical cavity defined transversely in the unitary housing of the grater hopper rotary drum and thereafter the drum is engagable with a crank. The vessel can be associated with either opposite side of the housing and the association of this vessel with either housing side does not interfere with grater operation.

A method and apparatus for producing shredded food products, such as cheese, is disclosed. The method and apparatus permits the production of cheese shreds to be accomplished in a unified operation wherein a sheet of cheese is produced and that sheet of cheese is cut to desired dimensions directly from the casting line. An arrangement of the invention may comprise a sheet former, a casting line, and a shredding assembly, all of which function as a single unit. The shredding assembly, itself a unique arrangement, first slices the incoming sheet of cheese into ribbons, and then cuts each of these ribbons to length. The sheet of cheese may be sliced into ribbons by passing the cheese through a pair of rollers having grooves or slots machined into their surfaces, the width of the slots corresponding to the desired width of the cheese ribbons. The cheese ribbons are presented to a plurality of transversely mounted elongate blades, each of which revolves about a common axis. Each blade cuts off segments of desired lengths from the cheese ribbons.

The present invention is directed to a continuous method for making a process cheese-type product. In the method, a flowing stream of a process cheese-type formulation which includes cheese particles and an emulsifying salt is provided. Steam is injected into the stream of the process cheese-type formulation. The stream of the process cheese-type formulation is then subjected to a mixing process in a chamber having an auger to provide a process cheese-type product. The stream of the process cheese-type product is then transported to a holding tank prior to packaging the process cheese-type product.

A process for producing pumpable foodstuffs, wherein raw foodstuffs such as raw cheese is pre-comminuted, mixed with further ingredients, thermally treated by steam injection, subsequently cooled and creamed or emulsified and then fed or passed to a further working or processing operation. The present invention further relates to an apparatus for producing pumpable foodstuffs, such as processed cheese, having a treatment apparatus for raw foodstuffs, a mixer, a device or unit for heating and subsequently cooling the cheese mass and having feed pumps for the cheese mass.

A method and apparatus for processing cheese comprises charging molten process cheese into a mold consisting of a plurality of cardboard lined, open-ended mold cavities oriented in spaced rows and circulating cooling air between and around each row to effect cooling of the cheese to the desired temperature. The rows of columns are defined by pairs of parallel side panels and crossed partitions formed of a rigid material and defining cavities which are elongate and rectangular in cross section. Support members hold the rows of columns in a parallel, spaced apart relation. After cooling, the mold is elevated, allowing the cheese columns covered by cardboard to be discharged from the lower ends of the mold cavities.

To fill a container and produce and package portions of spreadable food products in multiple layers, such as differing types of processed cheeses, an apparatus is provided which has means for metering the spreadable food products, compartments for the separate and alternate shaping of layers of differing products and means for ejecting and guiding the layers into a container. Units are also provided for preparing the container upstream of the filling apparatus and for applying a tear strip to the container, and units are provided for applying lids and for sealing the filled container downstream of the filling apparatus.
