    摘要: A novel low-carbohydrate digestible hydrocolloidal composition is separated from a cereal-based substrate by means of a specific sequence of steps for treating an aqueous slurry of the substrate. These all-natural compositions are low in digestible carbohydrates, principally starches, and rich in soluble fiber, principally β-glucan, as well as proteins. The hydrocolloidal products are recovered in high yields, are smooth in texture, have unexpected thickening properties, have a bland flavor, and are useful for texturizing food, especially bakery products. These hydrocolloidal products can also be used as food ingredients for increasing the nutritional level of foods and supplements.

    摘要: The invention relates to a method for extracting β-glucan from cereals. The extraction is carried out using wetted cereals by adjusting the pH thereof to a value below 5.2 with an acid, and further, by treating the cereal in an enclosed space under pressure less than about 5 bar, at a temperature of 100-130° C. After the treatment, the liquid phase is separated from the solid material, followed by recovery of β-glucan from this separated aqueous phase.

    摘要: An improved wet milling process is provided that allows for separation of seed coat particles from the horny endosperm particles of seed. The process uses soaking and grinding to produce seed coat flake particles and horny endosperm particles that may be separated using movement of liquid slurry of the particles, providing hydraulic lift to separate the seed coat particles. Improvements in the process allow for omitting addition of sulfur compounds to the process. By-products of wet milling with improved properties are provided.

    摘要: The invention relates to a method for improving the solubility of non-starch polysaccharides of a vegetable material. The products prepared by the method and the use of the products are also included in the scope of the invention. The method comprises crushing of the material by mechanical energy to form particles, with at least a major portion of the cells containing non-starch polysaccharides in the material being damaged. Preferably, the non-starch polysaccharides end up in particles as produced by crushing to form particles smaller than that of the initial cell containing these polysaccharides in the material. Disruption of the cells allows effective interaction between the dissolving medium and the polysaccharides to be dissolved, appearing as increased solubility. The material crushing can be performed under the joint effect of pressure, heat and shearing forces. Preferred embodiments include extrusion, expansion and homogenisation under pressure, preferred materials for these treatments comprising oat, rye and fractions of these. The solubility and dissolution circumstances of the product of the invention can be adjusted by mixing the material to be crushed with an ingredient rich in amylopectin.

    摘要: A food grade antioxidant and a baked food flavorant is isolated from roasted wheat malt containing bran. The germinated wheat is roasted until the malt's naturally occurring enzymes are substantially destroyed. The roasted wheat malt is milled into fine particles that may be physically separated into a fraction that is primarily homogeneous bran particles and into a fraction that is primarily heterogeneous endosperm and germ particles. The bran fraction is useful as a food flavorant and the endosperm and germ fraction may be used directly as an antioxidant for oils and fats, or foods, pharmaceuticals and cosmetics containing oils and/or fats or the antioxidant may be chemically extracted. The milled homogeneous bran and heterogeneous endosperm and germ particles may be recombined in customized proportions and thus used as a dually functional food ingredient.
