The present invention relates to reduced calorie fats comprising mixtures of reduced calorie triglycerides which are enriched in long chain fatty acid 2-position isomers (MLM triglycerides). In particular, the reduced calorie fats comprise at least about 40% of the long chain fatty acid 2-position isomer. The reduced calorie fats according to the present invention further comprise at least about 85% combined MML and MLM triglycerides, no more than about 5% combined LLM and LML triglycerides, no more than about 2% LLL triglycerides, no more than about 4% MMM triglycerides and no more than about 6% other triglycerides; wherein M=fatty acids selected from the group consisting of C.sub.6 to C.sub.10 saturated fatty acids, and mixtures thereof, and L=fatty acids selected from the group consisting of C.sub.17 to C.sub.26 saturated fatty acids, and mixtures thereof. The reduced calorie fats of the present invention have the following fatty acid composition by weight percent:(a) from about 15% to about 70% C.sub.6 to C.sub.10 saturated fatty acids;(b) from about 10% to about 70% C.sub.17 to C.sub.26 saturated fatty acids;(c) not more than about 10% fatty acids selected from the group consistingof C.sub.12:0 and C.sub.14:0, and mixtures thereof;(d) not more than about 20% fatty acids selected from the group consisting of C.sub.18:1, C.sub.18:2, C.sub.18:3 and mixtures thereof, and(e) not more than 4% C.sub.18:2 fatty acids.The reduced calorie fats of the present invention exhibit rapid crystallization into the stable beta phase.

Esterified alkoxylated polyols containing long chain saturated linear acyl groups are obtained by esterification of an alkoxylated polyol such as propoxylated glycerin with a C.sub.12 -C.sub.24 fatty acid such as behenic acid and recovery of excess fatty acid by treatment with an aliphatic hydrocarbon. Esterified alkoxylated polyols prepared in this manner are useful fat substitutes for the formulation of reduced calorie food products.

Fatty acid glycerides can be transesterified with lower aliphatic alcohols if the reaction is carried out in the presence of fatty acids corresponding to formula (II):R.sup.2 --COOH (II),in which R.sup.2 is an aliphatic hydrocarbon moiety containing 11 to 17 carbon atoms and 0, 1 or 2 double bonds. The products are distinguished by a low content of bound glycerol and a low acid value. Removal or neutralization of the catalyst is unnecessary because, after the transesterification, the fatty acids are also present in the form of their esters.

Diclosed is a lanolin-like synthetic oil produced by esterification of glycerol with a branched fatty acid having 6 to 14 carbon atoms, a linear fatty acid having 15 to 28 carbon atoms and a dibasic acid having 4 to 10 carbon atoms while all the following conditions (a) to (c) are satisfied:(a) molar ratio of the branched fatty acid to the linear fatty acid ranges from 1.7 to 2.3,(b) 0.7 to 0.8 mol of the dibasic acid is used per mol of glycerol, and(c) the number of remaining hydroxyl group ranges from 0.4 to 0.6 for three hydroxyl groups of glycerol.The synthetic ester oil has a color, smell and stability superior to those of lanolin and an adherability, spreadability, gloss and touch very similar to those of lanolin. Such an oil can be suitably incorporated into cosmetics, toiletries and external preparations to overcome the defects of lanolin and also to exhibit the characteristic features of the oil.
