There is provided an improved process for the separation and purification of plant proteins by initially separating the chloroplastic and cytoplasmic protein fractions, further treating the chloroplastic protein fraction enzymatically and extracting out other unfavorable substances. The resulting chloroplastic fraction has favorable properties close to that of the cytoplasmic fraction and is thus valuable for human consumption.

A polysaccharide-concentrate obtained from plant of the genera Cucurbitaceae, Papilionaceae, Tiliaceae, Labiate, Malvaceae, Asteraceae, Umbelliferae, Rutaceae, Chenopodiaceae, Linaceae, Rosaceae and Plantaginaceae by extraction with water and precipitation of the polysaccharide with alcohol or acetone, if desired after further purification. The polysaccharides having a molecular weight between 75,000-2,000,000, containing maximum 5% of nitrogen, maximum 5% of phosphorus (expressed in P.sub.2 O.sub.5), maximum 25% of ash, minimum 30% of reducing sugar, minimum 60% of total sugar (after acidic hydrolysis, expressed as glucose) has been shown to have especially anti-inflammatory activity.

Chromoplasts and/or chloroplasts are isolated from plant material. This wet mass is digested in aqueous medium with pectin- and/or protein-cleaving enzymes, insoluble substances are removed, and a carotinoid-rich sediment is obtained after acidifying the separated colloid disperse system. The sediment is heated at alkaline pH with aqueous ethanol or isopropyl alcohol to remove the major part of cleaved proteins, lipides and other accompanying substances. The sediment with enriched carotenoid content is mixed with antioxidants and, if desired, dried, providing a carotenoid concentrate free of toxic solvent residues.

High-protein plant extract is obtained by comminuting young green plant material, pressing the material to force liquid therefrom, and coagulating and separating the true protein fraction of this liquid. The remaining liquid, which can contain toxic substances, is inoculated with a yeast capable of utilizing nitrogen sources and subjected to aerobic fermentation until the nitrogen sources are substantially exhausted and the toxicants greatly reduced. The yeast is then concentrated, either by separation or by evaporation, and combined with the coagulated true protein thereby to obtain an extract which is detoxicated.

The present invention provides for isolated non-specific plant concentrates and other fodder additives and a process for their manufacture comprising precipitating a protein fraction from plant juices by coagulation and treating the coagulated green protein fraction with glycol or diglycol ether thereby isolating the valuable substances therefrom. The obtained concentrates are useful as animal fodder and in human nourishment.
