The method of producing one or more RuBisCO protein fibers including obtaining RuBisCO, tbr example from tobacco, combining the RuBisCO with one or more plasticizers, heating the combination of the RuBisCO and the one or more plasticizers up to about 140 degrees C., filtering the heated combination through an about 20 μm filter, and passing the filtered combination through an orifice to produce one or more RuBisCO protein fibers.

A hemp protein product, which may be an isolate, produces solutions at low pH values and is useful for the fortification of soft drinks and sports drinks without precipitation of protein. The hemp protein product is obtained by extracting a hemp protein source material with an aqueous calcium salt solution to form an aqueous hemp protein solution, separating the aqueous hemp protein solution from residual hemp protein source, adjusting the pH of the aqueous hemp protein solution to a pH of about 1.5 to about 4.4 to produce an acidified hemp protein solution, which may be dried, following optional concentration and diafiltration, to provide the hemp protein product.

Worldwide food shortages are predicted by the year 2050. The most seriously affected populations will be those who live in sub Saharan Africa and South Asia. Obtaining food and fuel from perennial grasses is advantageous. Unlike common grain crops the perennial pasture grasses are natural flora and do not need to be planted yearly. Until now, economic processing of perennial grasses for food and fuel was not considered possible. In this invention it was discovered that brief treatment of grasses with citrate softens the grasses presumable because the citrate chelates the calcium bound to pectin. With the integrity of the pectin disrupted, the cellulose is destabilized and the citrated treated grass can be manually extracted. The extract contains all essential amino acids required for humans and quantitative calculations show that the process can provide enough protein to meet adult male minimum daily requirements.

Herein disclosed is a process for solubilizing protein from a biological source selected from the group consisting of animal tissue and keratinous material and combinations thereof, the process comprising: forming an alkaline slurry comprising the biological source and a first alkali comprising hydrated lime or quicklime; heating the alkaline slurry to a first temperature of at least 50° C. for a first treatment time to solubilize protein while minimizing degradation of amino acids and obtain a first treated slurry; separating from the first treated slurry a first liquid product and a solid product, wherein the first liquid product comprises the solubilized protein and calcium; and removing at least a portion of the calcium from the liquid product by adjusting pH to higher than 8 to precipitate calcium and produce a low-calcium liquid product.
