The present invention relates to the use of whole soft avocados to obtain an avocado oil rich in unsaponifiable, said unsaponifiable containing aliphatic acetogenins and/or their derivatives. Advantageously, the oil has an acid value less than or equal to 3 mgKOH/g. The invention also relates to a process for obtaining an avocado oil rich in unsaponifiable from whole soft avocados. said unsaponifiable containing aliphatic acetogenins and/or their derivatives. The invention also relates to an avocado oil rich in unsaponifiable obtainable by this process. The invention also relates to the use of the avocado oil to prepare a concentrate of avocado oil enriched in unsaponifiable or an avocado unsaponifiable rich in aliphatic furans. The invention concerns a use of C7 sugars and derivatives of formula (I), called avocado perseose, which have, inter alia, a protective activity to epidermal skin cells. These C7 sugars and derivatives are capable of maintaining the expression of markers of adult stem cells, in particular basal stem cells. Avocado perseose can also be used for preventing the deleterious effects of environmental damage. Avocado perseose has a beneficial effect on the conservation of the potential of epidermal stem cells and thus helps maintain skin homeostasis.

The inventors have developed methods for evaluating the in vitro efficacy of formulations in preventing the harmful effects of UV on the skin of children aged three or less, using a skin model specifically capable of reproducing the characteristics of the skin of children of this age.
