摘要: Provided is a gelling composition capable of keeping a gel state in a food even when the food heated at 75° C. is cooled to around 45° C. at which the food can be eaten in a warm state. Specifically provided is a gelling composition comprising methyl cellulose, a 2.0% by weight aqueous solution of which has a storage modulus G′ (75° C.) at 75° C. of 3,000 to 5,500 Pa, the 2.0% by weight aqueous solution of which has a return temperature storage modulus G′ (75 to 45° C.) of 2,000 to 3,600 Pa when the temperature of the aqueous solution is returned from 75° C. to 45° C., and a 2.0% by weight aqueous solution of which has a viscosity at 20° C. of 3,000 to 10,000 mPa·s; a low temperature gelling agent; and a solvent. A food comprising the gelling composition is also provided.

摘要: Provided is a volatile composition having a small difference in volatilization amounts of a volatile substance within a wide temperature range from the normal temperature and enabling the control of the volatilization amount even at a high temperature by suppressing the volatilization amount of the volatile substance and by increasing the gel strength of the volatile composition. Specifically provided is a volatile composition having an alkyl cellulose having such a viscosity that a viscosity at 20° C. of a 1% by weight aqueous solution of the alkyl cellulose is 4,000 to 11,000 mPa·s as determined by a Brookfield viscometer and having such a storage elastic modulus that a storage elastic modulus G′(65° C.) at 65° C. of a 1.5% by weight aqueous solution of the alkyl cellulose is 3,000 to 4,500 Pa; a volatile substance; and a solvent.

The powder thus prepared is free of bitterness and readily dissolvable in cold water without forming clumps.

摘要: A composition comprising 10-80% by weight of a cellulose ether and a solvent selected from a water-soluble polyhydric alcohol, polyhydric alcohol ether, polyhydric alcohol ester, and ethanolamine is effective for purging extrusion and injection molding machines. The purging composition exerts a satisfactory purging or cleaning effect, but little abrasion effect, thus avoiding any abrasion of machine internal components by purging. Even if part of the purging composition is left within the machine after the composition is discharged out, the residue can be readily removed.
