    摘要: The present invention relates to a method for forming voids within foods, including such solid foods as meat, fruit and vegetable, such liquid foods as water and syrup, and other foods in the form of sol or gel and a method for cooling and solidifying the aforementioned foods while maintaining many voids therein. The method for expansion treatment of these foods according to the present invention comprises forcing a water-soluble gas, such as carbon dioxide, into a moisture containing food under a pressure of not less than 15 kg/cm.sup.2 in a pressure vessel and then reducing the pressure in the vessel at a rate of 1.5 to 150 kg/cm.sup.2 /min to cause expansion of the food. The method for expanding and solidifying foods according to the invention comprises increasing the pressure in the vessel during forcing the water-soluble gas into the food to liquefy the gas and then reducing the pressure in the vessel at a desired rate to cause expansion of the food and to evaporate the liquefied gas so as to cool and solidify the food. Accordingly, the method of this invention makes it possible to form voids within the tissues of a food, in particular within a solid food such as meat, and to uniformly form large voids in the foods by causing, for instance, separation of tissues from each other. As a result, the method of this invention makes these foods tender and can impart good drying properties to them.

    摘要: An apparatus for continuously sterilizes and fills food and medicines containing solids. In this apparatus, a filler nozzle is disposed downstream of a back-pressure tank, and a control valve is interposed between the back-pressure tank and the filler nozzle for controlling the flow rate of the products which are delivered from the sterilizer to the back-pressure tank. The control valve avoids a remarkable pressure loss which might otherwise be invited in the series passages of the apparatus. The outflow of air from the back pressure tank to the filler nozzle is minimized so that the back pressure can be applied to the sterilizer as stably as possible. At the same time, the sterilized products are continuously fed to the filler nozzle so that they can be packed simultaneously with their upstream sterilization.

    摘要: This invention provides a food material-container combination which allows the food material to be cooked and solidified by simple operations without a pot, and which simplifies the work of cleaning up after cooking. Referring to FIG. 1, a self-standing container 11 has an opening 12 at the top portion thereof. A food material such as tofu material is charged in the container 11 together with water. The upper portion 13 is sealed by folding it by hand. The container and contents are then thoroughly shaken, whereafter the content of the container 11 is heated by a microwave oven. After a prescribed period of heating, the container 11 is taken out from the microwave oven and the container is cut along the line 16. The end product can then be removed.

    摘要: An apparatus for mixing and dispersing powdered or granular materials into a liquid solvent with a pneumatic transport means including a supply hooper, a pressure vessel which receives granular materials from the hopper for pressurization, a granular material transport pipe attached at one end to the discharge portion of the pressure vessel, a pneumatic force source for feeding the granular materials under pressure through the granular material transport pipe to a mixing tank accommodating the liquid solvent therein. The granular material transport pipe is connected to the mixing tank in an upward or lateral direction at the level below the surface of the liquid solvent contained in the mixing tank. With this structure the granular material is kept from scattering towards the upper portion of the mixing tank, making the operation more sanitary. Further, since the granular material is fed into the solvent contained in the mixing tank by pressurized feeding gas, a uniform mixing may be achieve, and the formation of undissolved powder lumps or flocs can be prevented.

The steps involve (1) subjecting the curd to a crushing treatment that is carried out in the presence of a solution selected from the group consisting of soybean milk and an aqueous solution of isolated soybean protein, adding a coagulant to the solution containing the crushed curd before, during or after the crushing treatment; and (2) coagulating the solution containing the crushed curd and the coagulant by heating.
