    摘要: The present invention relates to an active agent, in particular a metalloproteinase inhibitory agent of casein-derived peptides obtained by hydrolysis of casein by a food grade bacteria.     摘要: The present invention describes protein hydrolysates: obtainable by the hydrolysis of a protein containing substrate; comprising free amino acids and peptides; and wherein the molar fraction of at least one free amino acid, present in the protein hydrolysate is at least a factor 2.5, preferably at least a factor 3, more preferably at least a factor 3.5 times higher than in a hydrolysate of the same protein containing substrate which has been completely hydrolysed to free amino acids, wherein the molar fraction of the at least one free amino acid in the protein hydrolysate is at least 25%; and wherein the Amino Acid Quotient (AAQ) in the protein hydrolysate is at least 10%. These protein hydrolysates can be used in the preparation of food compositions, wherein these protein hydrolysates provide for novel and unexpected flavours. Moreover these protein hydrolysates are applicable in personal care applications.

    摘要: A method for the selective hydrolysis of casein/caseinate in the presence of at least one further protein constituent other than casein/caseinate, the casein/caseinate and the at least one further protein constituent being brought into contact with a proteolytic enzyme under conditions for the hydrolysis of the casein/caseinate, characterized in that the casein/caseinate and preferably also the at least one further protein constituent are in an essentially dissolved state, and in that a proteolytic enzyme is a proteinase specific for casein/caseinate, such that the casein/caseinate is hydrolysed while the further protein constituent remains essentially intact. This method can be used, in particular, for the preparation of a hydrolysed casein preparation or alternatively for the preparation of a milk protein preparation, in particular, a whey protein preparation which has been stripped of casein/caseinate. The invention further relates to the preparations thus obtained, which have beneficial properties with respect to allergic reactions to milk proteins, and diabetes.

    摘要: The invention relates to the use of a protein component based on conventional proteins used for the production of foods, at least 20 wt-% thereof having a phosphate residue, which is covalently bound to the protein, whereby 50 to 100 wt-% of the proteins including at least one covalently bound phosphate residue, are subjected to a dephosphorylation reaction wherein 20 to 100% of the covalently bound phosphate residues were removed, for a treatment of adult and adolescent patients, as well as of babies and small children suffering from a disturbed gastrointestinal motility and of reflux-predisposed patients. The use of said protein component not only allows for a sufficient protein supply but it also passes rapidly through the stomach and prevents the stomach contents from flowing back into the oesophagus.
