The disclosed apparatus, systems and methods relate to modified atmosphere and pasteurized retail fresh protein preparations. Protein is packaged in a modified atmosphere lacking significant amounts of oxygen and then exposed to high-pressure pasteurization. The protein can be sealed or bagged within the modified atmosphere, and that combined with high-pressure pasteurization can extend the shelf-life of the packaged protein.

The invention relates to a method of altering the temperature of an animal carcass, the method comprising inserting an elongate device into the gastrointestinal tract of the carcass, and injecting a heat transfer medium into the elongate device such that the heat transfer medium is 5 brought into thermal contact but not physical contact with the carcass. The invention further relates to a device for use in altering the temperature of an animal carcass, the device comprising an elongate housing having an open end and a closed end, and first and second fluid conduits inside the elongate housing, the first and second fluid conduits being fluidly coupled proximate to the closed end of the elongate housing, wherein the first fluid conduit is 10 configured to receive an inflow of a heat transfer medium through the open end of the elongate housing, and the second fluid conduit is configured to allow an outflow of the heat transfer medium through the closed end of the elongate housing, and wherein, in use, the heat transfer medium in the first and/or second fluid conduit is in thermal contact with the carcass.

The present invention relates to a method for the application and implantation of starter cultures in products of animal origin for curing same, which comprises: a) introducing one or more starter cultures of Staphylococcus and yeasts in a whole muscle product of animal origin by means of sprinkling, tumbling and massaging; b) subjecting said product after step a) to maturation treatment with heat and humidity to favor starter culture growth; d1) freezing the product after step b), stopping the starter culture biological activity; and d2) cutting or slicing the frozen product; and d3) subjecting cutted or sliced product to a rapid drying process for between 30 and 120 minutes; and e) packing the dried product of animal origin.

The present invention is related to a vertical plate freezer comprising a number of freezing plates 1 being arranged vertically side by side with intervening freezing compartment 2. The freezing plates 1 are moveable in the longitudinal direction of the freezer, and are mutually connected to each other via intervening, releasable spacers 3 constituting sidewalls in the freezing compartment 2. The invention also concerns such spacers.

A tunnel (2) for the in-line anti-bacterial treatment of plucked poultry carcasses (or other animal carcasses) with a liquid cryogen or a cold gas at a temperature of less than 0°C has an entrance (18) and an exit (20) for the poultry carcasses. A monorail conveyor (22) extends from the entrance (18) to the exit (20) and passes thorough the tunnel (2). Poultry suspension shackles (24) are able to pass along the conveyor (22). Thus, poultry carcasses are able to be conveyed through the tunnel (2). The conveyor (22) may follow a path which reverses direction at least once.

Die Erfindung betrifft ein Verfahren zur Erhöhung der Produktqualität und Produktsicherheit von Fleisch oder Lebensmitteln tierischen oder pflanzlichen Ursprungs mittels gezielter Druck- und Temperaturbehandlung. Erfindungsgemäß erfolgt ein portioniertes Verpacken von Frisch- oder Warmfleisch beliebiger Form unter Nutzung eines Folienbehältnisses, welches über Rückstellkräfte verfügt, so dass aus dem verpackten Gut möglicherweise austretende Flüssigkeit sich über die Oberfläche des Gutes gleichmäßig verteilt. Im Anschluss erfolgt ein Einbringen der verpackten Portionen in eine behältnisartige Behandlungsvorrichtung, welche an den mit dem Gut in Kontakt gelangenden Flächen eine Vielzahl von mit einem Druck- und Temperaturmedium beaufschlagbaren Kissen, Schläuchen oder dergleichen elastischen Gebilden verfügt. Das Füllen der Kissen, Schläuche oder dergleichen elastischer Gebilde erfolgt mit dem Druck- und Temperiermedium derart, dass auf das verpackte Gut im Wesentlichen gleichmäßige Druckkräfte einwirken und das verpackte Gut in einem vorgegebenen Temperaturbereich gehalten werden kann, der über ein vorbestimmtes Zeitfenster andauert. Nach Ablauf des vorbestimmten Zeitfensters wird dann ein schnelles Kühlen des verpackten Gutes durch Austausch des Temperiermediums vorgenommen.
