The present invention relates to a method of encapsulating an uncharged, soluble, active compound within a self- assembled ionomer complex formed from polyelectrolytes, wherein the said method comprises the steps of mixing a solution comprising at least one polycation and polyanion with active compound, or adding a polyion to a solution comprising an oppositely charged polyion coupled to the active compound, wherein the interaction between the active compound and ionomer complex is non-ionic and non-covalent in nature. The invention also relates to an ionomer complex prepared thereform for use in transport and delivery of the compounds. In a preferred embodiment, the ionomer complex comprises poly-L-arginine, Poly(ethylene oxide)-b-poly(acrylic acid) (PAA-b-PEO), wherein the said ionomer encapsulates 4-methoxyphenyl β-D-glucopyranoside (MG).

The invention teaches a method of efficiently dewatering a microcapsule slurry to form a water re- suspendable filter cake of microcapsules. The process comprises providing an aqueous slurry of microcapsules dispersed in an aqueous solution; adding an agglomeration agent and dispersing the agglomeration agent into the aqueous slurry; adjusting the pH to a pH level sufficient to agglomerate the dispersed microcapsules; and filtering the aqueous slurry of microcapsules by gravity, vacuum or pressure filtration to thereby form a filter cake of dewatered microcapsules. The agglomeration agent is sodium polyphosphate, sodium tetrapolyphosphate, sodium hexametaphosphate, and/or sodium tripolyphosphate; or with anionic microcapsules or coatings even alkaline earth metal salts such as magnesium chloride, calcium chloride or barium chloride, or even aluminum salt such as aluminum chloride.

The method includes forming an outer shell by coacervation surrounding an internal phase which contains the active agent; and forming an inner shell by interfacial polymerization at the interface between the internal phase and the outer shell. The internal phase contains the active agent. The microcapsules are typically incorporated in a consumer product wherein the multilayer shell prevents the active agent from release until desired, generally during use of the consumer product.

The gelatin capsules can be ruptured or broken when the container is opened, thereby releasing the aroma compound and causing a favorable aroma for the consumer. The secondary protective coating can reduce or prevent degradation of the gelatin capsules during product packaging, transport, and storage, thereby enhancing their performance.
