摘要: The present invention relates to a particulate composition comprising enteric-coated glucosinolate and beta-thioglucosidase particles. The present invention further provides a method of converting glucosinolate to isothiocyanate in the small intestine comprising orally administering to a subject an enteric-coated chemoprotectant precursor composition comprising enteric-coated glucosinolate and beta-thioglucosidase particles. In another aspect, uncoated glucosinolate and beta-thioglucosidase particles may be provided in an enteric-coated capsule. Preferably, the glucosinolate is glucoraphanin and the beta-thioglucosidase is myrosinase. The enteric coating targets the compound for release in the small intestine where beta-thiaglucosidase enzyme converts glucosinolate to chemoprotectant isothiocyanate.

摘要: The present invention is directed to process cheese type products prepared with calcium-reduced ingredients but without emulsifying salts and methods of producing such process cheese type products without emulsifying salts. The process cheeses of the present invention are advantageously resistant to separation during heating and retain desirable organoleptic properties, such as texture, without using emulsifying salts. The process cheeses of the present invention are also lower in sodium than conventional produces cheese products.

摘要: Tandem, vertically-aligned vertical form, fill, and seal (VFFS) assemblies enable a method for manufacturing an ingredient package. In inner ingredient-bearing package is manufactured by a first superior VFFS assembly, which inner package is then downwardly displaced to a second inferior VFFS assembly. The inner package and a second ingredient are deposited (filled) into an open-ended outer packaging material being formed by the inferior VFFS assembly. After deposing the inner package and the second ingredient into the formed outer package, the outer package and inner package are sealed to one another at superior ends thereof to finally form an ingredient package. The finally formed package may be removed from partially formed packages in superior adjacency thereto. The finally formed package compartmentalizes the first and second ingredients for later consumer consumption.

摘要: A resealable closure (11) for packages (10) is provided which has a package integrity feature (34). The closure (11) includes a two-ply material having an inner film layer (12) and an outer film layer (13), forming a top of container (10). The outer film layer (13) has a sealing panel (26) completely covering a first panel (22) and a second panel (42) of the inner film layer (12). The sealing panel (26) is permanently attached to the first panel (22) and is releasably affixed a portion of the inner film layer around the perimeter of the first panel to form an opening in the top when the sealing panel with affixed first panel is peeled back from the top. The sealing panel is resealable against the top to seal the opening when the sealing panel is moved back against the top. The package integrity feature (34) comprises the second panel (36) of the inner layer which separates from the sealing panel to indicate that the container has been previously opened.

摘要: The present invention is directed to chemoprotectant precursor compositions provided from crucifer seeds and sprouts and methods for their preparation. Treatment of aqueous extracts from crucifer seeds or sprouts with adsorbents substantially increases the ratio of certain highly chemoprotectant precursor compounds (alkyl glucosinolates such as glucoraphanin, a.k.a. sulforaphane glucosinolate) to undesirable compounds such as indole glucosinolates (for example 4-hydroxyglucobrassicin). The method provides an extract which has a ratio of glucoraphanin to 4-hydroxyglucobrassicin of about 70 or greater. The resulting extract has improved color and odor and may be dried or used directly as an additive in a variety of foodstuffs.

摘要: A multiple compartment package includes a tray (13) having an open top tray compartment (14) and a removable tray cover (22), and an upper lid compartment (12) opposing and engaging the tray with a peelable film (25) sealing the bottom opening thereof. In one arrangement, the peelable film is removable from outside the package while the lid is opposing and engaging the top of the tray, to thereby dispense a secondary food product contained therein onto a primary food product in the tray compartment after the removable tray cover has been removed from the tray. Optionally, a hinge (20) connects the lid to the tray. Further, a method is provided for preparing a food product which includes causing a secondary food product to flow into a lower tray compartment by peeling a peelable film off the bottom of a lid compartment so as to allow the secondary food product to be dispersed into the tray compartment with A multiple compartment package includes a tray having an open top tray compartment and a removable tray cover, and an upper lid compartment opposing and engaging the tray with a peelable film sealing film sealing the bottom opening thereof.
