A process for separating polyunsaturated fatty acids (PUFAs) such as docosahexaenoic acid (DHA) and eicosapentaenoic acid (EPA) from less saturated long chain fatty acids (LCFAs) in a lipid composition, wherein said PUFAs and LCFAs are present as (i) triglycerides, or (ii) free fatty acids or monoalkyl esters, by exchange of at least a portion of LCFAs with short and/or medium chain fatty acids (MCFAs). The process can suitably be employed on marine derived oil, marine oil 2 derived oil products and other sources of PUFAs, including PUFA-rich singe cell oils (SCOs), and oils from genetically modified organisms with a modified lipid metabolism. The inventive process is based on novel use of lipases and distillation techniques, selectively chemically modifying species in the substrate material such that the desired species and chemically similar species become sufficiently dissimilar to be separable. Thus PUFA can be effectively enriched from material such as 30 herring oil with low PUFA content and high content of equal length monounsaturated fatty acids such as 20:1 and 22:1 fatty acids.

Triglyceride oils having one or more populations of asymmetric triglyceride molecules are provided. Asymmetric triglyceride molecule populations are triglyceride molecules that consist of a C8:0 fatty acid or a C10:0 fatty acid at the sn-1 position and the sn-2 position, and C16:0 or C18:0 at the sn-3 position. Another population of asymmetric triglyceride molecules are triglyceride molecules that consist of a C16:0 fatty acid or a C18:0 fatty acid at the sn-1 position and the sn-2 position, and C8:0 or C10:0 fatty acid at the sn-3 position. Methods of producing triglyceride oils and using the same are provided using sucrose invertase and hydrogenation of the triglyceride oil. Triglyceride molecules are produced by using recombinant DNA techniques to produce oleaginous recombinant cells.

The invention relates to a bloom retarding fat composition comprising a component A and a component B; said component A being present in an amount of 40 - 95 % (w/w) of said bloom retarding fat composition, and said component B being present in an amount of 5 - 60 % (w/w) of said bloom retarding fat composition; wherein said component A comprising a fat composition having a content of SatOSat TAGs of 60 % (w/w) or higher; and wherein said component B comprising a fat composition having a content of saturated fatty acids of 30 % (w/w) or less, and a total content of Sat2U TAGs of 18 % (w/w) or less, and a content Sat3 TAGs of 8 % (w/w) or less; with the proviso that if the content of SatSatU TAGs in component B is 1 % (w/w) or more, then the molar ratio of SatSatU: SatUSat TAGs is 1 or higher; and wherein Sat is a CI 6-20 saturated fatty acid, and wherein O stands for oleic acids; U stands for unsaturated fatty acids, including oleic acid. Furthermore, the invention relates to various applications of such a bloom retarding fat composition.
