Abstract: A yeast-free dough contains at least 40% natural cheese. The natural cheese is mixed with wheat flour, pregelatinized starch, and water to make a non-laminated dough, which is then sheeted, cut and dehydrated. The finished product has a peak force hardness of between about 15,000 to about 30,000 grams and an expanded internal air cell structure throughout and a bulk density of from about 100 to about 400 g/L.

Abstract: A vertical fill, form and seal (VFFS) apparatus for particulates that facilitates the close-packing (“settling”) of the particulates such that a smaller package is needed to contain a mass of particulates in a charge to the VFFS apparatus. The former of the VFFS apparatus, and an associated film driver, move up and down synchronously and in a controlled manner. A partially formed bag, below the former, containing particulates is shaken up and down as the former moves up and down, while the packaging film travels downward continuously in the apparatus. The shaking causes the particulates to settle, and to increase in bulk density. This allows use of less packaging, and lowers use of transportation fuel. In an embodiment, an actuator is in mechanical communication with the former (and its associated film driver) to apply a vertical reciprocating force to the former.

Abstract: A method and apparatus for causing attrition to an outer surface of a food product to provide a removed portion of the food product and a remainder of the food product. In a first aspect, an abrasive stream contacts the outer surface of the food product, thereby separating at least a portion of the outer surface of the food product from the remainder of the food product to provide the removed portion of the food product. In a second aspect, the apparatus includes a product positioner to position the food product in an attrition zone and a nozzle for discharging the abrasive stream into contact with the food product in the attrition zone. The abrasive stream can be food grade and can include a food grade fluid and a food grade abrasive, for example, air and salt, respectively.

Abstract: A vertical form fill and seal apparatus, for packaging particulates, includes a package sealing assembly that has opposed sealing jaws operatively coupled to each other by mechanical connection at a common pivot point. A first jaw actuator is mechanically coupled to the opposed sealing jaws to pivot the jaws in a controlled manner about the common pivot point. A second actuator is mechanically coupled to the package sealing assembly and is configured to impart controlled reciprocating motion to the package sealing assembly. A controller is configured to control the first actuator and to control the second actuator thereby causing the jaws to describe a preset locus of travel, allowing flexibility of type of bag being made without change-out of jaws. The packaging film may move continuously, or may optionally be controlled to move intermittently through the VFFS.

Abstract: An apparatus and method for reducing stress marks and pleats on a package. The apparatus includes the use of an elongated filling tube. The dimensions of the elongated filling tube reduce the stress on the film as it is being formed around the filling tube. Further, the dimensions of the elongated filling tube prevent the formation of pleats as the sealing jaws must travel a decreased distance to seal, and the filling tube cross section better resembles the final package.

Abstract: A method and apparatus for storing and dispensing a viscous product. The product and a propellant are stored in a container on a base, and the propellant forms a head space. In a storage configuration, the container rests on the base, the base rests on a surface, and the propellant in the head space and the product tend to move toward positions wherein the propellant in the head space is at a higher elevation than the product and the product is at a higher elevation than an inlet to a dispenser. In one aspect, the base comprises a first portion, a second portion comprising a lid, a sidewall comprising a window, and an interior. In a second aspect, the method comprises storing the container in the storage configuration, removing the lid to expose a dispenser, dispensing the product, and viewing an interior of the base through the window.

Abstract: An improved rotary head extruder incorporates a twin auger system, in lieu of the typically used single auger, to create random extruded products having a density within the range of about 3.0 to about 6.0 lbs/cu ft. Extrusion using the rotary die system of a rotary head extruder together with the twin auger system allows for a wide variety of fine materials to be successfully introduced into and conveyed within a rotary head extruder to the die assembly, where the materials are cooked to form random extruded products. A transition piece at the downstream end of the augers allows for continuous, uniform flow to the die assembly, where cooking takes place. The extruded products incorporate formulations with various ingredients aside from the typically used corn meal formulations, having different tastes and nutritional benefits while maintaining the desired bulk density, texture, and crunch of random extruded products.
