The present invention relates to the field of gels and gelling material and their applications. In particular, the present invention relates to a gel comprising a liquid medium and a gel matrix comprising sheared cell wall material from ripe and soft botanical fruits, its preparation, its possible uses, a product comprising such a gel and the corresponding gel building material and its application.
