The present invention concerns a disinfectant or antimicrobial composition for use in dental treatment, such as treatment and/or prevention of periodontitis, gingivitis or other forms of oral infection. The present Inventor found that microorganisms that infect the dental tissues and cause inflammation thereof, are susceptible to osmotic stress, to such extent that the application of a hypertonic composition is effective in curing or preventing infection and/or inflammations. It was furthermore found that these microorganisms are also susceptible to acidic stress. The present invention therefore provides compositions that induce osmotic stress in microorganisms causing infection of dental tissue when topically applied thereto, preferably osmotic as well as acidic stress. The present invention also concerns the methods and uses involving the compositions of the invention.

The present invention provides a method of preparing an edible product comprising non-viable bacteria providing a health benefit, the method comprising subjecting viable bacteria to at least two sub-lethal treatments to obtain the non-viable bacteria providing a health benefit, each sub-lethal treatment on its own not being sufficient to render the bacteria non-viable. The method porvides non-viable bacteria providing health benefits but which can conveniently be incorporated into a range of edible products.

A composition suitable for inhibiting the outgrowth of fungi is provided comprising a first ingredient which inhibits the biogenesis of a normal fungal cell wall and a second ingredient which is capable of perturbing the structure of the cellular membrane of said fungi, so that either the cellular integrity is essentially lost or cell division cannot take place, or both. The first ingredient preferably inhibits the anchorage of cell wall proteins in the cell wall of the fungi and is suitably a &bgr;-(1,6)-glucose polysaccharide, preferably &bgr;-gentiobiose or a pustulan fragment. The second ingredient is suitably a natural microbial membrane affecting substance (MMAS), preferably MB-21. The composition is particularly suitable as a preservative for inhibiting the outgrowth of fungi in food products, such as sauces, dressings, ketchups, and soups, but is also useful for preventing or inhibiting undesired fungal growth on other products such as personal health care products, e.g. soap bars.
