A removable ice bank probe assembly includes a guide tube mounted through an opening in the deck of a refrigeration unit and secured to an evaporator coil of the unit disposed within a water bath of a post-mix beverage dispenser. The removable assembly also includes an elongated rod for supporting an ice bank probe at a bottom end thereof and a transverse arm at the top end thereof which fits in a key slot in the top of the guide tube in order to accurately align the probe assembly within the refrigeration unit. The upper transverse arm may be gripped by the fingers of an operator to quickly remove the probe when repair or servicing is needed. The probe may then be easily reinserted into the guide tube and positioned via the transverse arm and slot in a proper alignment with respect to the evaporator coils which form the ice bank which it monitors. In addition, an ice bank probe protection bracket includes a wire form cage which surrounds the ice bank probe secured to the evaporator coils of a removable refrigeration unit in order to protect the ice bank probe during servicing of the refrigeration unit.

The present invention also relates to a method of producing a non-carbonated tea beverage, wherein the tea beverage is susceptible to growth of detrimental microorganisms, comprising the steps of: continuously feeding hot water into a mixing chamber; continuously feeding tea concentrate into the mixing chamber; continuously feeding cold water into the mixing chamber; continuously mixing the tea concentrate, hot water and cold water in the mixing chamber; and continuously dispensing a non-carbonated tea beverage wherein the non-carbonated tea beverage is better than an acceptable microbial count and is a substantially homogeneous non-carbonated tea beverage.

A cooking appliance incorporates a convection system including a blower or fan having an associated heating element used for thawing food items in an oven cavity. The convection fan and its associated heating element are specifically controlled to regulate the air flow and temperature within the oven cavity in a manner which significantly reduces thaw time over ambient conditions, while not negatively effecting food quality. In accordance with the most preferred form of the invention, the convection fan is constantly operated at a high RPM and the convection heating element is operated in the order of 80° F.-100° F. (approximately 26-38° C.) in order to establish and maintain an oven cavity temperature of about 80° F. (approximately 26° C.) for food thawing purposes.
