摘要: Provided is a powdered chocolate containing a fat and/or oil composition in a powder form wherein the fat and/or oil composition contains: 65 to 99% by mass of a XXX triglyceride having fatty acid residues X, each with x carbon atoms, at positions 1 to 3; and 35 to 1% by mass of one or more types of X2Y triglycerides each having a fatty acid residue Y with y carbon atoms in place of one of the fatty acid residues X of the XXX triglyceride, provided that a total triglyceride content is 100% by mass, where x number of carbon atoms is an integer selected from 8 to 20, and y number of carbon atoms is each independently an integer selected from x+2 to x+12 and satisfying y≦22.

The method produces a composition containing a β-form fat and/or oil whose particles have a plate-like shape.

摘要: An object of the present invention is to provide oils and fats which include constituent fatty acids containing a large amount of n-decanoic acid, scarcely cause discomfort when ingested, and have excellent cold resistance. The present invention provides oils and fats, in which the content of tridecanoin is 30% by mass or less, the content of medium chain fatty acids contained in the constituent fatty acids is 65 to 95% by mass, and the content of n-decanoic acid contained in the medium chain fatty acids is 50% by mass or more. Furthermore, the present invention provides oils and fats in which the content of unsaturated fatty acids contained in the constituent fatty acids of the oils and fats is 3 to 35% by mass.

摘要: Oils and fats containing 10 to 80 mass % of 1,3-distearoyl-2-oleoylglycerol (SOS) and including a triple chain length β-type SOS crystal are provided. In the measurement of the X-ray diffraction of the triple chain length β-type SOS crystal, the diffraction peak A corresponding to spacing of 3.95 to 4.05 Å, the diffraction peak B corresponding to spacing of 3.80 to 3.95 Å, the diffraction peak C corresponding to spacing of 3.70 to 3.80 Å, and the diffraction peak D corresponding to spacing of 3.60 to 3.70 Å are observed. The ratio of the diffraction intensity of the diffraction peak C to the diffraction intensity of the diffraction peak D is 0.35 or less.

摘要: An object of the present invention is to provide a method in which a fat and/or oil is produced by a transesterification reaction using a lipase. Specifically, the present invention relates to a method for producing a transesterified fat and/or oil, comprising: (1) a low-temperature clay treatment step of bringing a fat and/or oil and a clay into contact with each other at 30 to 80° C. to obtain a reaction substrate; and (2) a step of subjecting the reaction substrate to a transesterification reaction in the presence of a lipase-containing composition.
