The present invention concerns a process for producing a chilled dessert item containing a crunchy composition arranged in superimposed layers in its mass, comprising the following steps: a helical ribbon of milk, cereal-based, vegetable-based or fruit-based, product is continuously metered through a milk, cereal-based, vegetable-based or fruit- based, product outlet orifice of a metering nozzle; a layer of molten substance intended to form the crunchy composition after cooling is applied, to the helical ribbon being formed, continuously from the beginning of it being formed to the end of it being metered, by metering through at least one molten substance outlet orifice of said metering nozzle; and the helical layer of molten substance thus being formed is trapped between the first ribbon of milk, cereal-based, vegetable-based or fruit-based, product and a second helical ribbon of milk, cereal-based, vegetable-based or fruit-based, product, by concomitantly and continuously metering the second ribbon of product through a second product outlet orifice of the metering nozzle, such that said second ribbon is deposited onto the helical layer of molten substance being formed, simultaneously with the molten substance coming into contact with the first helical ribbon being formed.

A dispensing device having a housing capable of receiving a pre-packaged charge of pre-whipped topping or icing. The housing has an inner wall with a slot formed therein for receiving a rod. The rod engages with a pawl mechanism to move a piston in the axial direction to force the pre-whipped topping or icing through the outlet in its packaging. The pawl engages with the rod when it moves in a first direction and the pawl disengages with the rod when it is moved in a second direction opposite the first direction.

The present disclosure provides an apparatus for producing a multiple phase confectionery article. The apparatus may include a housing with a chamber, the housing having a first inlet and a first outlet, and a second inlet and a second outlet. A rotary valve may be disposed within the chamber, the rotary valve having a first bore and a second bore. The first bore may provide fluid communication between the first inlet and the first outlet when the rotary valve is in a first position, and the second bore may provide fluid communication between the second inlet and the second outlet when the rotary valve is in a second position. The apparatus may include a dispensing member in fluid communication with each outlet to dispense a continuous confectionery article having sequential amounts of a first confectionery material and a second confectionery material. Each confectionery material may have a different visual and/or organoleptic property.

Method and system for continuously producing pieces of liquid-filled gum material (50). An extruded rope of liquid-filed gum (25) is sized and separated into individual pieces of gum (50). A rotating drum mechanism (40) having a die ring (83) and cutter ring (90) with mating die members separate the rope of gum material (25) into individual pieces (50). Pairs of cam-operated plunger members (80, 82) compress and form the pieces of gum material (50) in the die cavities. Angled grooves in the die members prevent portions of the gum pieces from being chipped-off during formation. Guide pin members (260) are positioned between rider members (250) on the plunger members. A feed chute (60) with air assist transfers the gum rope from a sizing table (36) to the rotating drum mechanism. A stripper member (160) insures that the formed pieces of gum material are removed from the drum mechanism (40). Portions of the drum mechanism can be selectively heated and cooled, or not cooled at all. The invention provides a more efficient system for continuous, high production operation.

The present disclosure provides an apparatus and method for the continuous production of center-filled confectionery products. The apparatus may include an extruder for forming a continuous extrudate having a plurality of center-filled confectionery ropes. The apparatus may also include a forming device for forming individual confectionery pieces, and sealed center-filled confectionery pieces in particular. The forming device provides improved coordination and control of extrudate formation and extrudate feed into the forming device. The apparatus and method of the present disclosure increases product output and reduces the amount of unacceptable product.
Abstract:
The present invention provides an apparatus and method for forming confectionery products into desired shapes. In an embodiment; the ingredients of a confectionery product, such as a bubble gum, are blended together. The ingredients are mixed, cooled and then formed into traditional center pieces. Next, the center pieces are fed into an underwater pelletizer (16). The underwater pelletizer cuts the extruded confectionery pieces into miniature products. A recirculating supply of water immediately sweeps away the miniature products from the pelletizer, cools the products and transport the products to a centrifugal dryer (36). The centrifugal dryer separates the miniature products from the circulating water. The separated miniature products are immediately dusted with an anti-agglomerating compound. Finally, the product is coated or otherwise packaged for consumption.

Processes and apparatus for extruding a tubular film of polymer material. The apparatus comprises a circular coextrusion die having an inlet (10) for the or each component and having an exit channel (18) ending in a circular exit orifice (21) which is located radially outwardly from the die axis compared to the inlet (10). The die comprises several planar or conical die parts (5, 6, 7, 28, 29) clamped together, with surfaces supplied with grooves (14) shaped to form channels (11, 12, 13) for the flow polymer material. The shape of the channels is adapted to equalize the flow over the circumference of the exit orifice (21), and the flow of material is divided between the inlet (10) and the exit (21) into a number of part flows (13) of generally helical form with space (15) provided for overflow of material between said part flows, whereby the part are adapted so that they join to one common, circular flow.

The invention relates to a confectionery product which comprises at least one functional ingredient wherein it has a casing and a filling enclosed within the casing wherein the filling comprises at least one confectionery material having properties that confer to the filling a perceivable effect when the filling is released in the mouth; wherein the casing is capable of forming release means upon the action of the saliva in the mouth which acts to liberate the filling out of the casing and wherein the dissolution properties enable the casing to be left substantially as an empty shell before it has entirely dissolved in the mouth.
