Nutritional chocolate-flavored beverage mixes and other edible mixes that are fortified with highly bioavailable sources of iron such as ferrous fumarate and ferrous sulfate, yet do not develop undesirable gray color when the beverage mix is reconstituted with water or milk, even when the water or milk has been boiled. This problem of gray color development is solved by including edible acids such as citric or malic acid as buffering agents in the beverage mix so that the pH of the reconstituted chocolate beverage is about 6.5 or less. An additional benefit of including these edible buffering acids/salts is that they tend to stabilize the chocolate aroma in the reconstituted beverage. Inclusion of these edible buffering acids/salts in ready-to-serve chocolate-flavored beverages fortified with these highly bioavailable iron sources also prevents the formation of undesirable gray color.

The present invention is directed to beverage compositions comprising: a) a first component which is arabinogalactan; and b) a second component comprising one or more minerals selected from the group consisting of zinc, iron, magnesium, calcium, selenium, iodine, and fluorine. The present compositions are useful to provide beverage compositions which deliver adequate levels of water soluble dietary fiber and important minerals without affecting the product appearance, product taste, and mineral bioavailability. At the same time, the compositions herein deliver the benefits of fiber, one or more of the defined minerals, and/or provide other health benefits, including fighting infection, promoting healthy bacteria, and providing a desired dietary fiber benefit. These and other benefits of the present invention are described herein.

A mineral-fortification system that has a bottle cap, a pouch and a pouch opener. A powder is contained within the pouch, and the powder contains at least one mineral and a redox modulating compound. When the cap is secured onto the opening of a bottle containing a liquid and when the pouch opener is activated, the powder is released from the pouch and mixes with the liquid to form a mineral fortified liquid composition that is fortified with at least one mineral and has a pH between about 2.5 and 9.5. Moreover, the mineral fortified liquid composition has a redox potential that satisfies the following equation:0 ³ RP - (A - B*pH). In this equation RP is the redox potential in millivolts of the mineral-containing liquid composition, pH is the pH of the mineral-containing liquid composition, A is 400 and B is 20. The mineral is preferably selected from calcium, iron, zinc, copper, manganese, iodine, magnesium, and mixtures of these. Moreover, the mineral-fortified liquid composition may preferably be substantially free of flavor or sweetener compounds. Even more preferably, the liquid composition has no metallic taste or after-taste, a Hunter colorimetric 'b' reading of less than 5.0, and an NTU turbidity value of less than 5.0. The mineral-fortified liquid composition may optionally contain other nutrients and vitamins, for example, vitamin A, vitamin C, vitamin E, niacin, thiamin, vitamin B6, vitamin B2, vitamin B 12, folic acid, selenium, pantathonic acid, and iodine.

The present invention relates to color and flavor improvements in iron and zinc supplemented dry beverage powders having fruit and/or botanical flavor. Vitamins such as the B vitamins, vitamin A, vitamin C, and vitamin E can be added to the dry beverage mix. The supplemented dry beverage mix can also contain iodine, niacin and folic acid. In particular, methods for fortifying dry beverage mixes with certain bioavailable zinc and iron compounds without producing reconstituted beverages having undesirable color or flavor are disclosed. Also disclosed are beverages and foods fortified preferably with amino acid chelated iron that do not impart objectionable color due to the inclusion of a ferric ion reducing agent such as ascorbic acid and/or an agent such as citric acid that is capable of preferentially complexing ferric ion in the presence of polyphenols or flavonoids that are typically present in these beverages or foods.

A method for enhancing beta -carotene absorption in animals and humans by administering a beverage comprising: (a) from about 0.05% to about 0.3% calcium; (b) at least 0.0004% of beta -carotene; (c) about 0.5% to about 60% sweetener; (d) at least 0.005% flavor; and (e) the remainder being water is disclosed. The beverage can contain vitamin C, A, B, D and E. The beverage must be essentially free of iron and metals which cause vitamin degradation. Preferably the beverage contains gums or thickeners.

In one embodiment, the compositions comprise: (a) a protein component comprising a protein selected from the group consisting of whey, casein, and mixtures thereof; and (b) from about 0.8% to about 5% of a fiber component, by weight of the composition;wherein the composition comprises particles having a median particle size of about 1 micron or less and wherein the pH of the composition is from about 3 to about 5.In another embodiment, the compositions comprise: (a) a protein component comprising a protein selected from the group consisting of whey, casein, and mixtures thereof; and (b) from about 0.05% to about 5% of a fiber component, by weight of the composition;wherein the composition comprises particles having a median particle size of greater than about 0.8 microns to about 1 micron and wherein the pH of the composition is from about 3 to about 5. In yet another embodiment, certain compositions may be prepared by the following process: (a) mixing the protein component and the fiber component to form a first mixture comprising the particles; and (b) mixing an acidic component and the first mixture at a temperature of from about 4 oC to about 43 oC to form a second mixture comprising the particles; wherein the particles have the median particle size of about 1 micron or less; and wherein the first mixture and second mixture are formed under high shear conditions.

The present compositions are useful to provide beverages which increase the solubility of fat-soluble vitamins, and deliver the benefits of fiber, one or more of the defined vitamins, and/or provide other health benefits, including fighting infection, promoting healthy bacteria, and providing a desired dietary fiber benefit. Additionally, the present invention provides beverage compositions having excellent taste, and other organoleptic properties, despite the inclusion of the fiber and vitamin components.
