Use of starch(es) and starch derivatives in frozen desserts for improved meltdown and shape retention, including reduced expansion and contraction of the frozen dessert when transported at high altitudes, e.g., over mountain ranges. These improved characteristics are retained in the frozen dessert even after multiple heat shock cycling. The starch(es) and starch derivatives inhibit ice crystal formation in frozen after heat shock cycling. The frozen dessert comprising the functional starch able to gel during freezing conditions has a tan delta of 1.0 or less.

The present invention is directed to sago fluidity starch and the use thereof. Such fluidity starches exhibit exceptionally fast gelling properties, high gel strengths, and exceptional elasticity. These properties allow for significantly reduced processing times, including reduced hold times. Further, the higher gel strength allows for reduced starch levels without loss of final product gel strength integrity or texture.

PROBLEM TO BE SOLVED: To provide a dry composition which allows delivery of an active agent with excellent bioavailability.SOLUTION: The composition is prepared by emulsifying the active agent using a known liposome method, followed by encapsulation with a modified starch. The modified starch is prepared by preparing a starch derivative having a hydrophobic group or both a hydrophobic and a hydrophilic group, followed by hydrolyzing the starch derivative using enzyme. The resulting composition is a dry powder with excellent bioavailability. Further, the composition has a high content of the active agent and excellent stability.

PROBLEM TO BE SOLVED: To provide a method and an apparatus for determining properties relating to multi-phase systems. SOLUTION: The method and apparatus for determining properties relating to multi-phase systems are provided. In the method, an array of sample tubes, each containing a sample of a multi-phase system, is formed. An iterative process is used to generate at least two data sets of transmitted and/or backscattered values for each sample, and the data sets for each sample are processed to determine at least one property of the sample. The apparatus includes a support on which an array of sample tubes is assembled; a wave source and at least one wave detector for generating data sets of transmitted and/or backscattered values for each sample; and a computer means for iteratively operating the wave source and processing the data sets for each sample to determine at least one property of the sample.
