The invention provides a novel UDP-glucuronosyltransferase with a broad substrate specificity.

An image forming apparatus has a fixing device for fixing an image formed on a recording medium, a device for detecting an operating environment of the image forming apparatus, a selecting device for selecting a fixing device temperature in accordance with a detection result, and a control device for controlling the temperature of the fixing device to a selected fixing device temperature. The image forming apparatus is capable of efficiently bringing out the functions of a print engine thereof at a minimum cost without the need for adding a new high-speed device, achieving a higher printing speed and ensuring a good fixing property regardless of the thickness of paper used, while preventing wasteful energy consumption and adverse influences by heat.

The first component of the chromogenic material is used in an amount of 5 to 80%, preferably 7 to 50%, by weight with respect to the amount of the second component and in such an amount that the reflectance at any wavelength within the range of 580 nm to 880 nm, preferably within the range of 500 to 880 nm of color images developed by said color forming reaction is less by at least 55% than that of said record material before color developing.

The present invention provides a method for preparing a glycoside of a flavonoid compound, which comprises the step of treating flavonoid and a glycosyl donor with an enzymatic agent having glycosylation activity and being derived from the genus Trichoderma (preferably Trichoderma viride or Trichoderma reesei). Such a flavonoid compound includes a catechin compound or a methylated derivative thereof, and the glycosyl donor includes a carbohydrate containing a maltotriose residue (preferably maltotriose, maltotetraose, maltopentaose, maltohexaose, maltoheptaose, dextrin, γ-cyclodextrin or soluble starch). Glycosides obtained by the present invention have higher water solubility, improved taste, and increased stability. The present invention also provides novel glycosides of catechin compounds, which are obtained by the method of the present invention.
