Processes for the synthesis of polyol fatty acid polyester by transesterification of a polyol comprise reacting polyol with a first portion of fatty acid lower alkyl ester to provide a first step reaction product in which substantially all of the polyol is reacted with at least one fatty acid lower alkyl ester. The processes then employ a multistage column providing substantial plug flow of liquid therein for further transesterification of the first step reaction product. Partially esterified polyol, a second portion of fatty acid lower alkyl ester and catalyst are fed to the column to form a mixture and cause further transesterification of the partially esterified polyol and fatty acid lower alkyl ester, with lower alkyl alcohol being formed as a by product. The resulting liquid mixture of reactants and product is passed in a first direction between adjacent stages through the column for further reaction of partially esterified polyol with fatty acid lower alkyl ester. An inert stripping or sparging gas is fed through the column in a second direction between adjacent stages, counter current to the flow of the liquid mixture between adjacent stages in the first direction, with radial shear agitation. The lower alkyl alcohol by-product of the polyol-fatty acid lower alkyl ester reaction is transferred from the liquid mixture to the inert gas.

A process for preparing esterified polyol fatty acid polyesters is provided, where the polyol has n hydroxyl groups. The process provides for independent control of the level of fully esterified polyols, on the one hand, and the level of n-3 and lower esters, on the other hand. The process is especially suited for preparing sucrose polyester, wherein the process provides for independent control of the level of octaesters, on the one hand, and penta and lower level esters, on the other hand. The process can be used to reduce the level of undesirable reaction byproducts, such as difatty ketone and beta ketoester.

Methods for the solventless transesterification of a polyol comprise reacting polyol with fatty acid alkyl ester in the presence of a basic catalyst to produce polyol fatty acid polyester product and lower alkyl alcohol by-product, wherein a majority of the polyol is fully esterified. The reaction is conducted in a reactor at a temperature in the range of from about 60.degree. to about 180.degree. C. and at atmospheric or superatmospheric pressure. An inert gas is sparged through the reactor with sufficient mass transfer surface area contact between the inert gas and reactor liquid to transfer the lower alkyl alcohol by-product from a liquid mixture of reactant and product to the inert gas and promote full esterification of a majority of the polyol without the use of vacuum pressure.

The present invention relates to frozen hydrated par-fried potato strips comprising about 35% to about 55% moisture which when oven finished have substantially the same internal and surface texture as deep fried French fries. More particularly this invention relates to par-fried potato strips for subsequent finishing in an oven prior to consumption prepared by: (a) parfrying potato strips at an oil temperature of from about 270.degree. F. (132.degree. C.) to about 385.degree. F. (196.degree. C.) for a time sufficient to reduce the moisture content of the par-fries to from about 30% to about 50%, (b) hydrating the surface of said par-fries until the weight thereof is increased by from about 1% to about 12%, and (c) freezing said hydrated par-fries. The frozen, hydrated par-fries comprise from about 35% to about 55% moisture.
