Neotrehalose is prepared in a relatively high-yield by a process comprising allowing .beta.-galactosidase to act on a solution containing lactoneotrehalose to form neotrehalose and recoverying the resultant neotrehalose. The neotrehalose is a non-reducing oligosaccharide having a satisfiable stability and a rich- and high-quality-sweetness and is assimilated and utilized as energy source in vivo when orally administered. Neotrehalose in the form of crystal has a satisfiable handleability because it is readily soluble in water and substantially free of hygroscopicity. These render neotrehalose very useful in the fields of food-, cosmetic- and pharmaceutical-industries.

Lactoneotrehalose, a novel saccharide shown by the formula O-.beta.-D-galactopyranosyl-(1.fwdarw.4)-O-.beta.-D-glucopyranosyl .alpha.-D-glucopyranoside, is prepared by allowing a saccharide-transferring enzyme to act on an aqueous solution containing lactose and amylaceous substance. Lactoneotrehalose is a non-reducing oligosaccharide, extremely stable, readily soluble in water, and substantially free of hygroscopicity, as well as having a satisfiable quality and moderate sweetness. These render lactoneotrehalose very useful in the preparations of orally-administrable products, cosmetics and pharmaceuticals.

The neotrehalose has a satisfiable chemical stability, as well as other properties such as a sweeteness, energy-imparting ability, osmosis-regulating ability, filler-imparting ability, gloss-imparting ability, moisture-retaining ability, viscosity-imparting ability, crystallization-preventing ability, and non-fermentability. These properties render the neotrehalose advantageously useful in preparations of a variety of compositions.

A process for enabling the production of a particulate composition containing crystalline trehalose dihydrate is provided. Including allowing an α-glycosyltrehalose-forming enzyme to act on liquefied starch derived from a microorganism of the genus Arthrobacter and a trehalose-releasing enzyme derived from a microorganism of the genus Arthrobacter along with a starch debranching enzyme and a cyclomaltodextrin glucanotransferase; allowing glucoamylase to act on the resulting mixture to obtain a saccharide solution containing α,α-trehalose; precipitating crystalline α,α-trehalose dihydrate from the above saccharide solution; collecting the precipitated crystalline α,α-trehalose dihydrate by a centrifuge; and ageing and drying the collected crystals. Cyclomaltodextrin glucanotransferase derived from a microorganism of the genus Paenibacillus or a mutant enzyme thereof is used to increase the α,α-trehalose content in the saccharide solution to over 86.0% by weight, on a dry solid basis, without passing through a fractionation step by column chromatography.
